Holiday Apricot Kugel

“I first came across this recipe while visiting my wife’s family in Buck’s County, PA. It goes great with Thanksgiving dinner as a side dish. The original recipe was savory and comes from Eastern Europe and dates back more than 1,000 years. This particular recipe is most likely a variation of a recipe brought over to the new world by German/Dutch immigrants.”
16 oz bag of wide egg noodles
18 oz jar of SMUCKER’S® Apricot Preserves
16 oz package of cottage cheese
6 large eggs (beaten)
2 cups shredded cheddar cheese
1 cup butter (melted)
½ cup sugar
1 teaspoon vanilla extract
Cook noodles according to package. Drain and place aside.
Preheat oven to 375° F.
In a large mixing bowl, mix eggs, apricot, melted butter, sugar, salt and vanilla by hand until well incorporated. Fold in cottage cheese and noodles.
Place mixture in a 3” deep greased casserole dish.
Bake in 375° F oven for 50 minutes or until center is set up.
Sprinkle top with cheese and return to oven for 10 minutes.
Remove from oven and let sit for 10 minutes before serving.
