Fried Cabbage with Bacon, Onion, and Garlic

Made this recipe exactly as stated except for the salt, and it was great. My advice to others is to be patient cooking the bacon. Slowly let it get brown and crisp, you want to render as much fat out of the bacon as possible to cook the cabbage with. Delicious!

Black Magic Cake

Yes this is a very moist, wonderful cake. I have made this twice now to rave reviews. My only advice is let the cakes cool for 20 minutes. First time I tried to make this cake, I tried to remove from pan after 10 minutes and nearly lost a layer. I waited another 10 for the second layer and came out of the pan much easier. First cake frosted with a coconut cream cheese frosting and second one made a German Chocolate Cake. Even the non-chocolate lover loved it.

Baked Dijon Salmon

We loved this. Didn't have any pecans so didn't use them, but we did have chipolte breadcrumbs so subbed them instead of plain. Excellent tasting and very easy to make.

Garlic Asparagus with Lime

Made these for Christmas and was a huge hit. However, 1/4 lime didn't quite make, I added the juice from the whole lime to get the flavor. Will be making again.

Maple Dill Carrots

Love them! I love dill but would have never have thought to pair it with carrots on my own. I like that the glaze is on the thin side, it is not overwhelming when serving with a savory meal.

This was good but a little on the bland side. I think if I make this again I will use a smoked meat for more flavor. Ham or maybe smoked turkey would give this more flavor.

Favorite Old Fashioned Gingerbread

Made this exactly as recipe stated. I found the molasses to be a bit strong, but others liked it very much. Next time I will double the spices. I had no trouble with it being moist however, mine was done in 45 minutes instead of an hour. So I would suggest to check it after 40 minutes. Maybe that is why some bakers were having trouble with it being dry.

Dumplings

Easy and very tasty. I tried making dumplings once before and didn't care for the way they turned out but I think it was from a baking mix. I added the parsley and now I'm trying to figure out what other seasonings I can use and what else I can put them into. Thank you Carol for my new dumpling recipe.

Joey's Peanut Butter Cookies

Somehow we had a jar of store-brand, reduced-fat peanut butter that no one liked. So not to be wasteful,used it to make these cookies and they were delicious! Can't wait to try with good peanut butter lol. Only change I made was to bake at 350 degrees for 13-15 minutes.

Mexican-Style Goulash

This was OK. I upped all the ingredients and it still seemed to be missing something. I added fresh garlic, cumin, and hot pepper sauce. Still just eh. If I do make this again, and it's an "if", I think maybe lots of fresh peppers, bell, jalepeno, something green.

Salt & Pepper to taste!HA HA HA. Added salt, took a taste and couldn't taste anything for a half hour. Very fresh tasting. Great mixed with sour cream for Tex-Mex food.

Simple Garlic and Basil Pesto

My new pesto recipe! However, I have some issues with the measurements. Firstly, why would I chop or mince anything if it's going in the food processor. Secondly, instead of 12 servings,I would have preferred amount in cups. I started with 5 medium cloves of garlic and threw into the processor with the blade running. Stopped processor and put in 3 cups of basil leaves, good handful of walnuts, the cheese, a good shake of red pepper flakes instead of chili powder, salt & pepper to taste. Started processor and poured in 1/2 cup of evoo, which seemed to be enough. Since I was using this as a side dish, I cooked a 1/2 lb. of rotelli pasta, tossed with the pesto and only had enough leftover pesto to fill 3 ice cubes in an ice cube tray. That all said it was delicious and will be making again.

Tangy Catalina Pasta Salad

I made this two nights ago to go with Big Smokey Burgers from this site. I used tri-colored rotini, and I also had to double ingredients. I used all tuna, and when done it tasted like it came from a bottle, a can, and a jar. So to give it a more "fresh" taste, I added chopped fresh dill and lemon juice and salt (cringe, but it needed it). I think next time I will use fresh shrimp and these modifications. There is maybe 1 serving left in the fridge and only 3 of us so I guess we did like it.
