Easy Jalapeno Hot Sauce

Salt & Pepper to taste!HA HA HA. Added salt, took a taste and couldn't taste anything for a half hour. Very fresh tasting. Great mixed with sour cream for Tex-Mex food.

Simple Garlic and Basil Pesto

My new pesto recipe! However, I have some issues with the measurements. Firstly, why would I chop or mince anything if it's going in the food processor. Secondly, instead of 12 servings,I would have preferred amount in cups. I started with 5 medium cloves of garlic and threw into the processor with the blade running. Stopped processor and put in 3 cups of basil leaves, good handful of walnuts, the cheese, a good shake of red pepper flakes instead of chili powder, salt & pepper to taste. Started processor and poured in 1/2 cup of evoo, which seemed to be enough. Since I was using this as a side dish, I cooked a 1/2 lb. of rotelli pasta, tossed with the pesto and only had enough leftover pesto to fill 3 ice cubes in an ice cube tray. That all said it was delicious and will be making again.

Tangy Catalina Pasta Salad

I made this two nights ago to go with Big Smokey Burgers from this site. I used tri-colored rotini, and I also had to double ingredients. I used all tuna, and when done it tasted like it came from a bottle, a can, and a jar. So to give it a more "fresh" taste, I added chopped fresh dill and lemon juice and salt (cringe, but it needed it). I think next time I will use fresh shrimp and these modifications. There is maybe 1 serving left in the fridge and only 3 of us so I guess we did like it.

Big Smokey Burgers

Scrumptious Baked Chicken and Potatoes

I reversed the process on this. I took the potatoes, placed in a bowl and added the olive oil and seasonings and tossed together. Put the chicken into a baking dish and spread the potatoes around. I seasoned the chicken with garlic powder, s & p, then drizzled the remaining oil from the potatoes over the chicken. I put enough chicken broth in just to cover the botom of the pan, turns out I didn't really need to as the fat from the chicken would have done the trick. The end result was crispy skin chicken and lovely roasted potatoes. Next time I will check after 30 minutes, some of the fat may need to be drained off. Clean up was a breeze! Will be making again. Update: Made this again and brushed chicken with BBQ sauce for an additional 10 mins. YUM.

Rosemary Sherry Pork Chops

This was an easy, uncomplicated week night dinner. I also reduced the oil to 2 tbsps. I used Port wine as that's what I had in the house. Timing was right on. Very simple flavors that stand up to a spicy or more complicated side dish. I served it with scalloped potatoes and I did like that it wasn't very "saucy". However, I do think I would double the sauce for certain side dishes. Thank you Stacyo for a new dinner idea.

Italian Pinwheel Rolls

Made these the other night to go with Baked Ziti. They were a hit! I proofed my yeast first then added the remaining ingredients. Mine only took 2 cups of flour and did not have the sticky problem others mentioned. Rose beautifully. I didn't melt the butter, just spread soften butter onto dough and used dry parsley. Also topped with softened butter before baking and they browned nicely. Very nice soft roll but next time I think I'll use roasted garlic as the raw garlic was very strong. These have so much potential for using other fillings!

Creamiest Rice Pudding

I have always thought the best rice pudding was made on top of the stove with raw rice and this recipe so proves me right. The timing was perfect. The rice pudding was perfect. My only advice is to keep an eye on it while cooking as it will boil over quickly. I will be making this recipe many more times. Thank you Bonnie Q for a great recipe.

Waffles I

This was my first time making waffles and these were great. Mine only yielded 5 but that was enough. For those having a soggy effect, I read somewhere (probably here) after taking out of the waffle iron DON'T stack them but place on a paper towel then on a cookie sheet if keeping warm in the oven. We had ours with ice cream, oooohh what a treat.

Basic Cheese Polenta

Cinnamon Swirl Bundt Coffee Cake

Very delicious coffee cake. Read all the reviews and took from them. I've always creamed butter and sugar first then added eggs one at a time. Once all the ingredients were combined,I mixed the batter another 2 minutes at medium speed.I doubled the cinnamon/sugar and made 2 layers. For the reviewer who's batter didn't fill the pan, I don't know what happened I had a very full pan and yielded a nice size bundt cake.

Bacon and Blue Brussels Sprouts

I have made this so many times already I can't believe I haven't rated it until now. I have a friend who requests this when she comes for dinner and over the weekend we had her birthday dinner. Her father called me the next day for the recipe, he was making it again for that night! I like it better when I sub chicken stock for the water. I use fresh sprouts and they do take longer than 4-6 minutes to make them tender. I have to admit, I never use the vinegar, I'm not much of a vinegar person.

Strawberry Cake Filling

Perfect! Easy and fast! I used fresh strawberries as that was what I had in the house. I made it a day ahead of the cake and it set up great. Only thing I might change in cutting the strawberries a little larger next time. Will be making this again.
