Creamy Chicken and Wild Rice Soup

Yum! Like everyone else, I added carrots, onion and garlic. I didn't have wild rice, so I used orzo instead. I seasoned with a little chicken boullion, lemon, curry powder, and dried parsley. I used 4 Tbsp. of butter and nonfat milk. I changed the recipe a lot, but it's great to play with! I suggest you try your own adaptations - this fabulous recipe can handle it!

Dutch Apple Loaf

Yum! I added cinnamon, nutmeg and some fresh raspberries as well as spices and oatmeal to the topping. It was amazing! Thanks for the recipe.

Easy OREO Truffles

So good!! I brought these to my school counselors and they raved about them. I added a bit of melted chocolate to the cream cheese mixture which made them even better. I didn't put the crushed cookies on top, I instead drizzled white chocolate on top. One fabulous truffle, definitely try these out :)

Fudge

Definitely delicious! I added a tiny bit of milk and some sea salt to give it an extra dimension of flavor and texture and it was simply fabulous. I also mixed it with a hand held mixer after taking it out of the microwave, it gives it an extra smooth, creamy finish. Delicious and sooo easy! Update: Another DELICIOUS variation; buy some dulce de leche or make it yourself and swirl it into some of this fudge. Holy yum. It's incredible. Try it!!

Bran Flax Muffins

Yum, so delicious and so versatile! I make these all the time for my family and every loves them! I leave out the oil. Sometimes I add a few tablespoons of peanut butter, sometimes a few of applesauce. I used half a cup of Splenda brown sugar mix, and I use whole wheat flour. They're still always delicious, and so variable. Definitely try this out.

Oatmeal Pancake

Yum! I only had one egg white, so I just used that and use Activia light vanilla yogurt instead of the cottage cheese. I also threw in about a teaspoon of baking soda to give it some rise. It was delicious! I also blended some natural low sugar maple syrup with some blueberries. Delicious!

Pecan Pie V

Yum!!! I've made this many many times, with no changes. However, in an attempt to get healthy, I made some major adjustments last night and it still turned out great! To fill a deep dish pie pan, I used 3/4 Spenda Brown Sugar Mix, 1/2 Cup Splenda, 3/ cup canola oil instead of butter, and 6 egg whites. Still turned out great!! Try this if your looking to stay a bit on the healthy side.

Grandmother's Buttermilk Cornbread

Yum! I did it exactly as the recipe said, except added a can of corn and cooked it in a preheated iron skillet to give it that crispy crust. A great recipe I'd make again and again...my family absolutely loved it.

Sweet Coated Pecans

A great, versitile recipe!! I've tried it the orginal version and with the half brown/half white sugars and vanilla instead of water...it's fabulous both ways. I've given it as a gift and it was loved so much! My only recommendation is toasting the nuts a little bit BEFORE toasting them with all the coating...it gives that nice, roasted nutty flavor that just gives it that extra kick. Thanks for the great recipe Debbie!

This is a great recipe! I followed it to the T, except I added a bit more salt because we like a mix between sweet and salty. Oh, I also added a dash of nutmeg. Overall, an amazing recipe! My whole family enjoyed it.
