Oven-Roasted Asparagus

did this with some sauteed shrimp, ( butter, olive oil, splash of white wine), and almost forgot to make the entree! Perfect combo!

The Best Meatballs

I got a little carried away. I misread the original recipe, and added about a cup of parsley, plus I added a sauted onion. Instead of Italian bread I used Planko instead, had it on hand. also added some mozarelle I needed to use up.AND, ( I told you I got carried away), instead of water, I used some red wine. Now I know there is debate about whether to cook your meatballs in the sauce, or pre-brown (which I have always done in past), so I did 50-50. Used a tomato-basil sauce, and added some fresh mushrooms. This was a FEAST! The meatballs were the star!!! I used all beef, 93% lean, but I figured the extra cheese made it less so. All in all, the original recipe is a great base recipe. By the way, added some red win to the chef too! :).

Zucchini Bread

Instead of chocolate chips, I added 1 cup diced carrots. Served with cream cheese...YUM!

Hearty Corn Chowder

I followed some of Jessica's,( review from 06/16/09), tips. Used Turkey bacon, diced. Deglazed the pan with a splash of white wine. Used non-fat condensed milk, and chicken stock instead of water. Didn't bother with the cream corn, just used frozen, ( probably double the amount; I LOVE corn). Used fresh dill, which suprisingly didn't get lost in the mix. Used Yukon gold spuds. I added a teaspoon of chopped garlic, only because I put it in everything. And as Jessica said, lots of fresh ground pepper. I'm single, and cook on Sundays for the upcoming week...this will definetly make me rush home from work! Yum Yum Yum!!!
