Tater Tot Casserole II

This is so good! I reduced the sour cream to 12 oz, increased the cheese to 1 1/2 cups (colby jack that I chopped up), added a can of corn, and sprinkled garlic powder on top. Yum!

Downeast Maine Pumpkin Bread

Delicious. I like my bread extra spicy so I doubled all of the spices. I also added a splash of vanilla, and reduced the sugar by a cup. I also bake my own pumpkin and puree it and use it in place of the canned stuff. Trust me, it's way better! I baked this for about 48 minutes and it came out perfect.

Chicken Souvlaki Gyro Style

This was awesome! The only thing I did different was use apple cider vinegar in place of the rice vinegar and dried dill weed instead of fresh because that is what I had on hand. Phenomenal recipe - I will make again!!!

No-Mayonnaise Ranch Dressing

This is the best ranch dressing I have ever tasted. I am a huge fan of ranch but often wonder how much extra salt, sugar, and preservatives I'm consuming with the bottled stuff. This is so fresh and delicious and I will never buy bottled ranch again.

Slow Cooker Pulled Pork

This recipe is so simple and delicious. I used pork shoulder instead, about 2.5 pounds. I used Sweet Baby Ray's BBQ sauce: Sweet and Spicy. Turned out great!

Kung Pao Chicken

This was great! I didn't have white wine so I used chicken broth and also used hot chile sauce. I doubled the sauce after reading reviews, it turned out really good. It was five stars after that little adjustment.

PHILADELPHIA Summer Potato Salad

I thought this was fantastic! I am not a fan of regular potato salad because I don't like mayo so this was a great alternative to the traditional recipe. I did make a few minor changes. I didn't use the reduced fat cooking creme because they did not have it at the store I shop at. Instead of shredded parm I used Kraft grated parm & regiano cheese (it was on sale!). Didn't use as much water, only 1/8 of a cup. I also seasoned with salt and pepper. I will definitely be making this again.

Caprese on a Stick

This recipe is amazing and was a hit! I used marinated mozzarella balls and cut them in half. I skipped the olive oil and drizzled the oil from the mozzarella balls over the top of the skewers. On the side I had a bowl of balsamic vinagraite dressing for dipping. It was fabulous!

Smothered Filet Mignon

Delicious! We don't have an actual grill so we used our foreman to cook the steaks and transferred to an oven to broil to melt the cheese. Turned out great!

Broccoli Chicken Divan

This recipe was a great and easy meal! I did follow other reviews while making this and added a few touches of my own. What I took from other reviews was to add the 1/2 cup sour cream, 1/2 cup extra cheese for the filling, and doubled the butter and bread crumb mixture. Otherwise I sauteed the chicken with olive oil and minced garlic and about a 1/2 cup of zesty italian dressing. I steamed the broccoli just enough to be extra crispy so it wasn't mushy after baking. I also used italian seasoned bread crumbs instead of plain. I mixed everything together and baked for about 17 minutes. The result was delicious!
