Salsa Chicken Rice Casserole

Much better flavor than the usual chicken and rice casserole. I think it's the salsa that makes it so great. I only used half the amount of cheese that was called for and that was plenty. I took this dish to a potluck and it disappeared fast. I thought it might be a little too spicy for the kiddos but they loved it too.

Donut Muffins

Italian Spaghetti Sauce with Meatballs

I added 1/4 cup red wine to the sauce and it was wonderful! The sauce works great as pizza sauce too.

Chocolate Zucchini Cake III

Mini Meatloaves

Delicious recipe! It has great flavor even without the ketchup topping. I used 3/4 tsp salt and 1/4 tsp garlic salt. I also used another reviewers suggestion and let the oats soak in the milk for about 10 minutes before adding the meat which made the oats barely noticeable after the meat was cooked. Will make again for sure.

Best Chocolate Chip Cookies

This recipe is a keeper! They stay fresh and chewy for days. Better than your average chocolate chip cookie. They disappear quickly!

General Tao Chicken

This turned out great! Loved the flavor and was easy to make. I added julienned carrots (added them at the same time i added the water and vinegar) and spinach. Just make sure you add the chicken right before serving so it stay a little crispy.

Pillow-Soft Dinner Rolls

I couldn't ask for a better recipe! The directions were easy to follow and the rolls came out so moist, light, and fluffy! I usually have a hard time with bread making and end up with dense brick-like rolls, but not this time!! There will be no need to search for another roll recipe after you try this one!

Vegetarian Chickpea Sandwich Filling

Love the healthy factor but it was a tad bland. Seemed to be missing something. I like lots of veggie dishes but this one needs a little meat in my opinion. I will add a bit of tuna next time.

Thai Noodles

very tasty dish! I used water chestnuts and bok choy in place of the bell peppers. I also didn't have red chile sauce so I just used 1/2 tsp of red pepper flakes instead. Oh, and i did add a few dashes of lemon juice at the end too. Also, I followed the peanut sauce recipe that one of the reviewers posted and it was way to peanut-buttery for me, so i'll cut the peanut butter in half next time. One reviewer mentioned that this dish was gloggy. To cut down on the gloggy factor I did not mix the noodles and chicken mixture together before serving, put them in separate bowls. Will make this dish again for sure! It's fun to make, you've gotta try it!

Chewy Chocolate Chip Oatmeal Cookies

So so good! I didn't need to add extra flour or baking soda as some reviews suggested. But next time I'll bake them for just 10 minutes since we like them a bit more soft and goey. Will definitely make again!
