Slow Cooker Chicken Taco Soup

This was so easy to prepare the kids were able to help out! There was very little preparations. The down side was, it filled my crock pot to the brim and bubbled over, but I got home in the nick of time and put it in a bigger pot. Plus it didn't smell as good as it tasted, so I was a little worried. But it tasted great and did not disappoint, we ate with the recommended sides.

Ube-Macapuno Cake

After reading several other reviews and following my own gut I made couple changes on this recipe. For one, I added extra food coloring to get a vibrant color. I used about 3 tsp of each red and blue. I also mixed the ingredients slightly different, I added the salt into the egg whites to make them stiff and fluffy. I did not add anything else to the egg whites and added the rest to the batter. I also beat the batter as minimal as possible, just enough to get everything incorporated since this seemed to make the cake dry. I also decided to make cupcakes because I wanted small portions, this made 24 cupcakes exactly and took 20 minutes to cook. I topped with a coconut cream cheese frosting and shredded coconut. I took them to work and set them in the break room, they were gone by lunch and went over well:) People seemed to like the exotic food!

Perfect Lobster Bisque

Not bad. I was trying to recreate a crab bisque I had on vacation even though this called for lobster the rest of the flavors looked the most promising so I gave it a whirl. And while this was close in flavor it was not in texture. Even though the process would not be easy to do I think straining the pureed mixture would really help. I will make it again, but next time try to strain it to get an even smoother texture because texture can make or break a meal.

Key Lime Pie VII

This is By Far The BEST Key Lime I have had since my last couple trips to Florida. I used a whole bag of Key Limes, I cut them into quarters and pressed them in a garlic press something I learned about while reading a cooking magazine. I used 2 full 14 oz cans of sweetened condensed milk. Making a home baked graham cracker crust is fast, easy and makes a world of difference too. Garnishing is simple using a star tip pipping and fresh whipped cream with just a bit of powder sugar to stiffen it up. Adding a single slice of key lime to each piece of pie just before serving gives a gourmet look! This pie is so fast but guests will think you spent hours on it;)

Slow Cooker Lancaster County Pork and Sauerkraut

I made this on a busy busy day! I was so busy in fact I forgot to make any side dish such as potatoes. As a last second thought my husband steamed up some rice in the rice cooker (20 minutes) and we served the tender pork and juicy kraut over the rice I wasn't sure how this combo would work, I thought that it would be better with potatoes or dumplings but we had no time. The rice turned out to be so delicious, I wanted seconds. I recommend serving it over rice even if you are not in a hurry. One more thing I love to add a tsp or 2 of bacon drippings to my Kraut so I did add this straight away and OH MAN it's good!!! Give it a try!!

Zucchini Cake I

What a hit! I loved how easy this cake was to make, and my family loved to eat it. My youngest son who will not eat zucchini devoured this cake faster than anybody! I shredded a little bit more than 3 cups zucchini (about 3 1/2) so I added it all and just added a bit of Penzey's Dutch Process High Fat Cocoa (about 2 or 3 Tbsp) to balance the dry and wet ingredients. My cake was very fluffy and beautiful. Everybody loved it!!!

Rice with Summer Squash

I wanted a semi healthy way to use some of the veggies in my garden so I tried this. I was feeling too lazy to chop everything so I used the food possessor but I wish I would have taken the time to cut little cubes, I think it would have been a nicer fit rather than slices. The other thing was I added a few pieces of big shrimps that I cut into little bite sized bits with scissors and added a hot pepper from my garden. I took the lazy mans way out and cooked the rice up in a rice cooker with some broth which was way easy and fast. If I make this again I would still use the rice cooker and shrimp and hot pepper, but I would take the time to hand cut squash and zucchini into nice cubes! Overall it has a great flavor, it uses lots of veggies which is a Huge bonus! There is no meat so it is easy to toss some if you chose. This would make a nice side dish if you have visitors and cook steaks or chicken on the grill, or a main dish for a small family. The flavor is simple, and you can concentrate on the beautiful flavors of the vegetables.

Herman Reunion Cheese Ball

This is okay. It kinda ends up tasting like something you would buy pre-made though like from hickory farms or something. I won't be jumping out of my skin to make this again, but it wasn't bad either. People generally enjoyed this.

Asian Chicken Noodle Salad

For the most part this went over well. The only criticism I have was that I personally feel there was a little too much dressing for the salad even though I added extra vegetables, a beautiful summer squash that I slivered and toasted for 3 minutes in the oven. If you eat it the first day and don't give the salad time to rest it will taste too much like the dressing. The overall flavor was pretty good. (I had some of this salad the second day and it was much better! the flavors seemed to be fully incorporated and it all came together. Even if it is hard, wait to eat this the second day!)

Peppermint Lemonade

I have used a similar technique using basil bouquet so I thought I would give the mint leaves a try too when I came across this today. I tried 2 new recipes today and liked this one best. However, I personally like to make fresh lemonade with around 6 lemons, then do a simple syrup with 1 part sugar, 1 part water and a bundle of the mint (or basil) leaves I boil it on high, remove the bouquet and add the syrup to the lemon juice and pour in 1 bottle of chilled pellegrino water and serve chilled with ice. It is not too sweet or too strong and the mint (or basil) tastes so delicate with the bubbly water. Plus its kid friendly. Enjoy!

Brazilian Lemonade

I think this drink takes some practice to make it just how you like. But If you like tropical drinks you will like this lemonade. I added some coconut rum by the advice of another user and this really rounded out the flavor! I enjoy lime juice for a change instead of the typical lemon. The problem was I think I pulsed the limes too much finely and it was really hard to strain, plus that leaves a more bitter taste, which is okay cuz I don't mind bitter but it could be a problem for some. My husband also enjoyed this drink, I will make it again, but next time for a crowd.

Mimi's Giant Whole-Wheat Banana-Strawberry Muffins

Thanks for a great healthy recipe! Seriously they smell as good as they taste. I didn't have strawberries so I used the black berries and raspberries that I had on hand and needed to use up. I also made a crumble topping with an instant low sodium reduced fat brown sugar oatmeal packet and a little butter, I just mashed it together with a fork and put it on the tops of the muffins while baking. The whole house smelled amazing and they really turned out light fluffy moist and fantastic! The kids literally were crowding around the oven waiting for a muffin! What a great breakfast or snack. The second time I tried blueberries that also went over very well, and I used the same method for topping with whole grain oats and butter crumble.

German Pancakes II

We love to eat these pancakes with berry jam, it tastes much more authentic this way. Although syrup tastes good too. These pancakes are easy to make, fun to watch bake, and everybody loves to eat them! I just discovered them about 10 years ago, but ever since my family has been enjoying them.

Crab Salad

I love to bring this to gatherings, people always ask how to make it. Instead of adding old bay seasoning and celery seed sometimes I like to add chives and a couple tbs of white onion. The real key to this recipe is the sugar. It tastes great just on crackers, or in a pasta salad. I have even used it instead of tuna in serving sandwiches.

BBQ Chicken Pizza II

It was pretty good, I did add blue cheese to one of the pizzas I made, just to experiment a little and it tasted really good I didn't really have any peppers but I was adding spinach and arugula to a couple of the pizzas and they turned out very tasty.

Premium Pizza Crust

A simple crust, I tried the sponge method this time. It kind of reminds me of a pan crust, not too thick or thin, not too greasy. Next time I might try the overnight method.

Ricardo's Pizza Crust

I did not use a bread maker (because I don't own one), just made it by hand, and it turned out fabulous! This crust was so amazing and flavorful that truly you could eat it plain without any pizza toppings. I made a chicken and arugula pizza with crunchy dried tomatoes and a mix of cheddar and blue cheese. It really was a good mix with this crust.

Always a hit. The last time I made this over the weekend I put in a layer of cool-whip in the bottom for something fun and different and I added an extra package of worms too. Ever single person had at least seconds or thirds!

Cobb Salad

A hit with adults and kids! I added 1 extra avocado because its everybody's favorite and just a little parsley for freshness. I used turkey bacon (only because it was all I had in the house). I served the salad in those individual edible salad shell bowls that you bake in the oven, like the kind you get in the restaurants. It was awesome!
