Spicy Potatoes and Scrambled Eggs

Very simple but lacking something. Peppers, onions, garlic, cheese, ...something. Great idea to nuke the potatoes before frying.

Used Franks Red Hot Sauce and left out the cornmeal. Yummo!! The sauce wasn't overpowering but you could still taste a hint of it.

Taco Pizza

I used leftover meat from the "Shredded Beef for Tacos" recipe instead of the ground beef and made one with beans and one without. Both were very good but the kids preferred the one without the beans. I didn't have any tortilla chips otherwise I would have used them because this dish was lacking something. Overall a great idea and crust recipe.

Easy Mini Quiche

Super yummy. A little soggy on the bottom, but I think it was my fault because I ran out of egg mixture after nine cups and had to make more using another egg. I should have used less. OOPS.

Portobello Bellybuttons

I modified this recipe quite a bit. Used egg noodles instead of Tortellini, added milk with the wine and basil, and then added a tablespoon of cornstarch by mixing it with some of the sauce and then pouring it into the mixture. Tossed in the cheese and then poured it over the noodles and tossed it all together. Topped it with a little more cheese. Delish.

Good for a no cook. Better if you're impatient like I was, but still not quite the creamy yumminess that a custard based ice cream produces.

Microwave Caramel Popcorn

I can't believe how easy and quick this is! This stuff tastes like someone was doing some hard labor in the kitchen. You know those rice cripy treat commercials where the mom fakes her culinary blood and sweat? You could fake it with this stuff too. YUMM-O!!! Also, I screwed up and put the baking soda in with everything else, not paying attention. Whatever! Didn't matter. Still delicious!! Our resident popcorn connesiour (aka picky teenager) says two thumbs up!

Cream Cheese Bars II

These are amazing and so ridiculously simple. My only problem was that I pulled the crescent rolls out of the fridge but then didn't actually get to them for almost 15 minutes. I had a hard time unrolling them and keeping them from stretching too much. I think they got a little warm. In the future I'll leave them in the fridge until I'm ready for them.

Bananas in Caramel Sauce

Very good! I couldn't find superfine sugar and used granulated. Then I goofed up and put the sugar in with the butter BEFORE it was melted. It all worked out OK. It just took a LONG time. EXCELLENT sauce. We jarred what was left and have used it on ice cream and apples.

Flatlander Chili

So Halloween was here and I needed some help. Found this recipe and thank goodness. I was able to throw it all together. We didn't simmer it for and hour and a half and it was still yummy. Lots leftover to freeze. We've used the leftovers in chili mac and chili dogs. YUMM...
