McCormick® Stuffed French Toast

I made a variety of these using apricot, strawberry and peach jams. Everyone's favourite was the strawberry. A nice change from the traditional french toast.

Pepperoni Rolls

I cut the sugar back to just a half cup and still found the dough to be too sweet to go well with the pepperoni. I also added some mozzerella inside the rolls and served with pizza sauce for dipping. They were okay but I think I'll stick with pizza.

Monterey Chicken

I found that I didn't need even a half cup of marinade to cover four chicken breast halves. I did use a homemade teriyaki sauce instead of the thinner marinade sauce at the grocery store. I'm a bit concerned that it doesn't mention saving any marinade to pour over the veggies. Marinade should NOT be re used.

Sarah's Applesauce

I needed applesauce for a recipe I just couldn't wait to make but didn't have any on hand. So I found this and used empire apples because that was all we had. I don't know if that is the reason why but I could not mash this even after letting it cook for 25 min. No worries though, I put it in my ninja (blender) and thought it would be watery but really liked the consistency.

Chinese Chicken Fried Rice II

One tablespoon butter for the egg is too much, I found it to be greasy. I cut the onion back to one half because I added other vegetables, red peppers and green beans. I love that you can add any veg that you have on hand and it would work. I did make my rice earlier in the day, I'm not sure if or why that part is important, but according to the top three reviews, it's crucial. This didn't taste like the rice I find at my local chinese restaurant but it was still really good none the less.

Garlic Cheddar Chicken

I used margarine instead of butter and a little less than the recipe calls for. I also cut back on the amount of parmesan. The cheddar doesn't stick to the chicken very well but the overall flavours are outstanding! I like that this is all done in the oven and produces a flavourful, moist chicken breast!

Fried Bass

I used a lot less oil to fry these, I only had a thin layer in my pan. Instead of the cajun seasoning and lemon pepper, I just used salt and pepper. Also used much less flour but way more chips. I've never done a three part breading on fish before and I don't know if that was the reason or the salt and vinegar chips, but I just loved this!

Apple Brickle Dip

I changed the servings from 6 to three and also reduced the amount of sugar. I only used 2T brown and 1T white. This was sweet enough and the skor bars gave it a nice crunch!

Easy Beer Bread Mix

I opted to leave out the onion powder and italian seasoning just because I didn't think they would go over very well with the kiddos. I upped the brown sugar from 1/4 cup to 1/3 cup. This came out great and went really well with the soup that I made for dinner (broccoli cheese) and I'll be putting this one into my recipe book.

Easy Raspberry Lemonade

I couldn't find the frozen lemonade so I used one can regular lemonade and added 2 of the crystal light raspberry ice singles. I found it a bit too sweet the first time around so for the second batch I upped the amount of water about 4 and a half. Everyone that was over agreed that this was the right amount for this drink.

Moon Cake

When the cake came out of the oven, I started to wonder why it was named moon cake. It was interesting to say the least. There were peaks and valleys everywhere. (I think I posted a picture if you're interested in seeing what I mean.) The cake part was almost spongey in texture but the topping was better. I don't think that I will be making this again.

Easiest, Most Delicious Meringue Buttercream

I scaled this back to make half as much. For the half recipe I "should have" used 1 1/2 cups butter but cut that back to just the one cup. I don't remember where I read the tip to let it come to room temperature after beating and before adding the butter, but that is what I did. This was my first attempt at a meringue frosting and I was really pleased with the results!

Grilled Chicken Wings with Sweet Red Chili and Peach Glaze

I put this on boneless skinless chicken breasts instead of wings. I couldn't find the peach apricot preserves so I used equal parts peach and apricot jams. This makes a nice glaze that I'll use again.

Pumpkin Oatmeal

Wonderful! The only thing I did different was add 2T sugar to sweeten. I loved this, my husband loved this, and my two little boys loved this! What a nice, warm way to wake up on a cool winter morning!

BBQ Pork for Sandwiches

I didn't use my good ribs for this, instead I picked up the cheapest cut of pork I could find. After being in the slow cooker, it's so tender, so you don't need to buy the expensive meat. For the sauce I did a mix of Kraft chicken and rib and Diana great western smokehouse. Everyone at dinner asked for the recipe, this is a winner for sure!

Hot Onion Dip

I too sauteed my onions first, sprinkling on some salt and cayenne. Instead of the full amount of parmesan cheese I did a parm/mozza mix. A nice dip that went well with crackers and chips.
