Spicy Bok Choy in Garlic Sauce

After reading the recipe and all of the reviews, I knew I would enjoy this recipe. I wanted to make it a main dish so I doubled the sauce, following the recipe to a "T". I used about 1 1/2 pounds of bok choy, about 3 cups of fresh broccoli, 6 small carrots juliened, 1/2 large onion and 6 cloves of garlic. I quick fried each of the vegetables separately adding the oil as needed and starting with the onions and garlic. After frying all of the vegetables I added the "Baked Tofu Bites" from this site that I made last night then poured the double batch of sauce over all and tossed. A very hearty and flavorful dish. I have saved this one and will make again.

Oat-Rageous Chocolate Chip Cookies

I've made these biscuits many times and they are definitely my "go to" recipe. I use half whole wheat and half all pupose flour and usually use 3/4 to 1 cup of cheddar cheese. The biscuits rise very high and are so flavorful. Thanks for a great biscuit recipe.

Salmon and Spinach Fettuccine

Exactly what I was looking for. So easy and perfect ingredient proportions. I seasoned a slamon filet with salt, pepper and Italian seasoning and sauteed in a tablespoon of olive oil. I melted 2 tablespoons of butter into the pan I sauteed the salmon in with a few cloves of minced garlic. I then added the milk and followed the recipe exactly from that point except that I added twice the amount of spinach. Great, simple, tasty recipe.

Vegan Bean Taco Filling

This is so delicious. I've always loved bean burritos and never thought of making one myself. This recipe is perfect. I did increase the cumin and I added one chipotle and a little of the chipotle sauce and had it on a warmed whole wheat tortilla. I completely forgot to add the cornmeal; I'll try it the next time I make it which will be very soon. It is delicious and filling. I'll make this often.

Fresh Tomato Basil Sauce

I've got my second batch of Fresh Tomato Basil Sauce simmering away and it is already delicious and rich after only 30 minutes. I follow this recipe with just a couple of changes. First, I do not seed or peel the tomatos; I enjoy the chunky texture with seeds and skins and feel like I'm throwing away the "good stuff" when I peel and seed. I also add at least one full cup of fresh basil but will add a full two cups next time. I like the flavor to be intense and the sauce to be thick and chunky. I heat some up for pasta; I use it as pizza sauce for the Spinach and Feta Pita Bake (this site), for wraps and for the sauce in my spinach lasagna. Thanks for the recipe. It is perfect.

Aunt Mary's Banana-Chocolate Chip Bread

I baked these yesterday and they are delicious. It is an "immediate" keeper. I followed the recipe exactly except I used butter in place of shortening, added 1 banana and baked in cupcake pan for 35 minutes. They are so moist and delicious. I will try alternatives and see if I can come up with one as delicious but a little healthier. Thanks for a great recipe. UPDATE: I am baking these for the 3rd time in 1 month at the request of my 10 year old grandson who insists I put this in the family collection. No changes necessary to the original recipe except for the extra banana. Once again, Thanks for the recipe.

Smoky Chipotle Hummus

I've made this recipe at least 4 times now and it is a definite keeper. I made only a few changes; I do not add water, instead I add a little of the water that the roased bell peppers are soaked in. I do not add any salt and do not miss it at all as there is a "fiesta" of flavor going on with all the other ingredients. I also add an additional clove of garlic as we all love the spice. This recipe is a crowd super-pleaser!! Thanks so much for this recipe.

Crustless Cranberry Pie

A definite keeper! The first time I baked the pie I had to get it out of the house or I would have eaten the whole thing myself. I followed the recipe to the letter excpet that I substitued vanilla extract for the almond. I have a huge mango tree in my yard and the mangos were coming down in spades so I decided to try it with ripe mango. I added 1/2 teaspoon of cinnamon and 1/4 tsp of cloves and everyone loved it so much I made 2 more to give away. I will try it with cranberries again tomorrow substituting almonds for the walnuts and using the almond extract. I can't wait! Thanks for a great cranberry recipe that I can use all of the cranberries I bought on sale and froze after the holidays!

Bacon, Egg, and Cheese Strata

I am always looking for "prep ahead" dishes for family Sunday breakfasts and this is perfect. The only change I made was to use the "pre-cooked" bacon slices. I used one 12 oz package. I followed the recipe exactly and it turned out perfect. I will try adding in peppers and other items in the future. Thanks for another great recipe.

Mango Shortbread Bars

I have made this shortbread twice now and it is so delicious. The second time I substituted 1 cup whole wheat flour for 1 cup white flour and enjoyed it even more; warm out of the oven with a scoop of vanilla ice cream and chocolate syrup drizzled over it all! Dealing with the mango can be labor intensive but it is so worth the effort. Like one reviewer before me said, "the riper the mango the better". Definitely one of my favorites from this sight so far. Thanks for the recipe.

Grandma Johnson's Scones

These are excellent scones. I split the dough in half and add 1 tsp orange zest and 1/2 cup dried cranberries to one half and 1/2 cup of chocolate chips to the other half. I pat each half into a 3/4 thick disk and cut each disk into 12 wedges (for smaller portions). I don't know if I'll find a better scone recipe but I know that this one will be a definite "go to" over and over.

Magic Cookie Bars II

I just made this for the first time and it is delicious. I didn't have graham crackers so I followed a previous reviewer's tip and used quick oats. I also used low fat sweetened condensed milk. I made a mistake and used 2 sticks of butter instead of 1 stick of margarine but it was still very good. I will make again many many times. It is very rich so, using the oats and the low fat sweetened condensed milk made me feel a little better about it and it was still very very yummy and so so easy to throw together.

Italian Spaghetti Sauce with Meatballs

I've made this recipe at least 3 times and have been asked for the recipe by so many people. The only changes I made were to use Italian sausage in place of the ground beef and I always soak my bread crumbs in milk and squeeze the milk out before I put them in the meatball mixture; this step will guaranty very moist meatballs. The total 2 hour simmer time is essential; it is what makes this sauce so rich and intense with basic ingredients.

Jumbo Molasses Cookies

I just made these and they were delicious. Nice and chewey and crunchy from the sugar. I was very concerned about flat cookies so after the initial chill, I rolled the cookies then rolled in sugar and then put cookie sheet with cookies in the fridge for about 10-15 minutes before baking. This is a forever keeper!! This was my first molasses cookie and I may not try any others. Thanks for a great recipe.

Brown Rice Lentil Salad

I just made this for my lunch tomorrow and it is delicious. I followed the recipe exactly except that I added thin carrot sticks and a stalk of celery for a little more color and flavor. I did find the dressing a bit sour and will cut the red wine vinegar down by at least half. I also followed one review and cooked 1/2 cup lentils and 1/s cup brown rice with 2 cups chicken broth in the rice cooker. It turned out well. Five stars for this one because the possibilities are endless!

Country Pumpkin Muffins

Great, moist muffins. I subbed 1 cup whole wheat flour for white and 1/2 cup applesauce for the oil. I decreased sugar to 1 1/2 cups (1/2 cup was brown sugar) and used 2 cups pumpkin. I omitted the raisins and walnuts.
