Pot Roast, Vegetables, and Beer

So. Darn. Good. I made a few minor adjustments, but kept it mostly the same. I omitted the flour just because I prefer it that way and used Squirt soda instead of beer (that's what I had, but it made it so tender good). I also added a little celery salt and rosemary. I baked it in my dutch oven for 5.5 hours at 250 and added the veggies for the last hour so they weren't all mushy. When the veggies became tender, I pulled out the meat and gravy, turned my oven to broil, put the dutch oven with veggies back into the oven with the top off and took them out when they were golden-brown. Gorgeous. Husband and I have decided that we're going to be making a lot more meals in our dutch oven and will definitely be doing this one again (and again and again).

Szechwan Shrimp

This reminded me of something that McDonald's would come up with and call it "stir fry". I followed the recipe to a T, and when I tried it, I couldn't get the ketchup-y taste out of my mouth. Needless to say, I'll definitely not make this ever again.

Chewy Red Raspberry Squares

Oh heavens these are good. My husband couldn't keep his hands off them and he's usually a strictly chocolate lover. Per suggestion of another reviewer I subbed the almond extract for vanilla and added 1 Tbs less sugar. And the thing that made them to die for was I used apricot preserves instead of raspberry (because that was all that I had). I think I'll try plum next and then maybe blackberry. These are definitely a new favorite!

My husband lived in Brazil for a few years so I decided I would make this for him as a surprise--what a hit! His only suggestion was instead of making them 2/3 the size of a golf ball, make them the size of whoppers so you can have more topping to chocolate ratio.
