Clark's Quiche
This was fantastic! I omitted the mushrooms, ham and made it without the pie crust. I didn't miss the crust at all as the filling is pretty rich tasting, and I didn't have any problems with the bottom sticking to the dish. Using the measurements listed, I had enough filling to fill a 10 inch quiche dish and a 9 inch pie pan. I liked the sour cream and spinach in the recipe, those were new ingredients to me to include in a quiche. I will make this frequently.

Oatmeal Whoopie Pies
These are awesome! My boyfriend always begs for oatmeal cream pies at the grocery store, so I made these for him instead. These would be a great treat for bake sales and picnics, and are suprisingly quick to make and assemble. The cookie recipe is great alone, but made even better by the filling. I used a 1/2 cup of shortening for the filling, and will try butter next time. Be generous with the filling, I used it sparingly and had lots left over. Great recipe!

Quick Quiche
4 stars for a great base that you can do anything with! I too omitted the butter and did not miss it at all, and I used cheddar cheese as I had that on hand. I grated a small russet potato and added that to the mix, it was a great addition (you could also chop it into small cubes and add). Also, in my oven at 350 in a glass pie plate it took a good 45 minutes to cook. Next time I will saute the onions beforehand, they were crunchy, and I will also add more spices, it was a little bland for my taste.
