Baked Chicken and Zucchini
I was looking for a quick and easy recipe to use some zucchini and found this. Made it pretty much exactly as printed, with the exception of method. . .Why cook the chicken first if it goes on top of the veggies? I did a light saute of the zucchini and garlic (also tossed in a bit of onion) and then put them on the bottom of my baking dish. Then I browned the chicken breasts (using panko breadcrumbs) and continued with the instructions. Used Italian blend shredded cheese. Great, light meal! Thanks.

Ham Salad Spread
My four-year-old granddaughter "helped" me make this today using some leftover Easter ham. We made it pretty much the way recipe called with some minor changes: we used Miracle Whip instead of Mayo (as my hubby prefers it) and left out the raw onion (as my hubby does not like it). For added "zing" I added about one teaspoon of prepared horseradish. Hubby loved it, granddaughter ate it by the spoonful. Thanks!

Asparagus, Ham, and Lemon
Was looking for a recipe to use up some leftover Easter ham and a pound of fresh asparagus but wasn't in the mood for something creamy. This filled the bill! I increased the amount of ham to 8 oz and cut the asparagus into 1 - 1 1/2 inch pieces. Added a bit of chopped red sweet pepper for color. By increasing the amount of ham, this became our entree which I served alongside homemade rice pilaf. Excellent! Hubby especially liked the added touch of freshly squeezed lemon. Thank you.
