Southern Peach Cobbler

This was very tasty! I followed the advice of some other reviewers and added a bit of cinnamon and vanilla to the crust mixture. I used two cans of peaches since my cans were a little smaller, so I ended up with less breading, but it was great! We topped it with some vanilla ice cream and enjoyed it.

Sweet and Spicy Sweet Potatoes

This has become a favorite at our house, even friends and family who don't like sweet potatoes liked these! I love sweet potatoes and these are a fresh take on an old favorite!

Slow Cooker Beef Stew I

This is a great beef stew! It is great as is and can be altered to fit your needs. I use half red wine and half beef broth for mine, and I add fresh rosemary and thyme. Sometimes I substitute sliced mushrooms for the celery, just depends on whats in the fridge. Everyone loves it here!

Honey Corn Bread

This is the best cornbread ever! I love the fact that it has real corn in it. I've done it with canned corn too and its still great. And it will turn out fine using milk too if you're out of half and half. Just a great cornbread, but don't use it if you don't like sweet cornbread. I cut down on the vanilla in mine, but other then that I stay pretty true to the recipe.

Pumpkin Oatmeal

I liked this recipe. Its also good with raisins in it if your out of walnuts. I just used regular honey because I didn't have avocado honey and I've done it with raisins or walnuts and like it either way.

Tofu and Rice Stuffed Peppers

This was pretty good. I did add a few extra spices that I like to jazz it up a little. I think next time I make it I will use a veggie burger substitute instead of the tofu unless I can find a way to cook my tofu to make it less squishy.

Veggie Burgers

These had great flavor. We had a little trouble with the burgers falling apart, I think there was too much moisture so we tried to add a little more flour to the mix. We ended up giving up on the grill because they were falling apart and finished them in a pan and they were very yummy.

Decadent Pumpkin Muffins

Baked Lentils with Cheese

This was very good, and you can modify it based on what you have in your pantry at the time. I used fresh thyme and left out the sage. I only had half a bell pepper, so I added an extra stalk of celery and some fresh mushrooms and it turned out great! I also used half cheddar and half mozarella. My meat loving husband loved it too, and it makes plenty so you can enjoy leftovers the next day, would definitely make again.

Italian Frittata

Crab Casserole

We enjoyed this recipe. Only deviated very slightly from the recipe, added about 1/3 cup light sour cream in addition to the mayo and also some old bay seasoning and an extra teaspoon of worcestershire sauce. It was pretty yummy, everyone here liked it and had seconds. We didn't have canned shrimp so just used some frozen shrimp instead. For the bread crumbs we used seasoned panko bread crumbs - very yummy!

Coconut Curry Tofu

I made this and it was delicious. I cut my tofu into little triangles and dry fried it a bit before making the recipe to try to improve the texture a little and it didn't fall apart as bad as it probably would have. I used regular coconut milk instead of light and a pinch of dried basil instead of fresh because its what I had. Otherwise, followed recipe exactly. It was delicious over jasmine rice! Would definitely make again:)

Raspberry Vinaigrette Dressing

It is so delicious, I've made it with EVOO and vegetable oil, both ways are yummy. I also recommend cutting back some on the sugar, the amount called for is not needed and some just goes straight to the bottom even right after shaking up. I also used rasberry balsamic vinegar. This is better than any storebought ones I've tried.

Banana Chocolate Chip Cookies

Very yummy, used 3 ripe bananas mashed (about 1.5 cups) for more banana flavor and cut back the butter to 1/3 cup. They are cakelike but we didn't mind that. Baked at 375 for 14 minutes and they came out perfect.

Juicy Peach Crisp

This was really good. I didn't have almond extract so used vanilla instead. I bet it would be good with oats too next time. I only had 5 peaches and it still turned out good.

Salmon Chowder

We really enjoyed it, will make again regularly. Used one large can of salmon and used minced garlic instead of powder. Also used regular milk instead of canned because thats what we had. Its a keeper!
