Party Punch IX

Absolutely loved this! So did all of our party cause it was GONE! I made it as stated except I halved the recipe (which it made one full punch bowl still!) I also halved the sugar- so a total of one heaping cup. I used strawberry and raspberry jello.

Raspberry Oat Bars

We loved these! I made the recipe as stated and it didn't seem like quite enough to fill my 13x9 pan so i didn't press it all the way to the edge. Next time I will do a batch and a half for 13x9 pan.

Spanish Chicken

We loved this! I didn't have some of the ingredients but I made it work! I did not have any green peppers or chili powder. I used chicken broth instead of water and added a couple dashes of cayenne pepper for an extra kick. I did have to add some more broth after it had been baking for about 20 minutes-- It seemed really dry. Turned out great though!

Sweet Potato Minestrone

This was a big hit! I was short on many ingredients, but it still worked out well. Only had green onion, no celery, only had chicken broth on hand. I did not have italian seasoning so I just threw in whatever dried herbs I could find. This was seriously so good!

doubled recipe-- used 1 cup whole wheat flour and 1/2 cup all purpose - 1/4cup ground flaxseed and 1/4 wheat germ. these were GOOD.

Mini Pumpkin Whoopie Pies

scrumptious! Followed recipe except I added ground nutmeg. I made the cookies a little too big so next time I will be sure to make them "mini". Also, the cream cheese filling is super sweet so next time I will cut sugar in half for the cookie. super good cookie!

Momma's Wheat Germ Cookies

so delicious! My whole family ate these up. I used about a third less sugar and used mostly whole wheat flour. i did not have coconut, pecans or dates so I just used mini choc chips! i will be making these again and again for sure!

Irresistible Double Chocolate Muffins

so yummy! I made the following changes only because I did not have all the ingredients: did not have cocoa, used regular milk with tbs of cider vinegar, used a little extra ww flour, extra choc chips and about 3/4 cup brown sugar. a dash of pumpkin spice, and ground nutmeg-- these are oh so good!

Quinoa and Black Beans

This was my first time trying quinoa! It was really good. I used only one can black beans and olive oil instead of veg oil. I used a little bit less veg. broth than it called for but next time will use the full amount. I forgot to buy the cilantro-- didn't miss it too much, but hope to try it with it next time. YOU MUST USE FRESH LIME JUICE! Squeeze some on before eating-- it seriously adds so much to the dish.

Pan-Fried Asparagus

So easy and so stinkin' good! I used a couple tablespoons of butter and eyeball the salt. The recipe calls for way too much salt. I also added the minced garlic about a minute before the asparagus is done. Don't overcook! Should only take about 7 minutes total. Nobody likes saugy asparagus.

Whole Grain Waffles

So, So yummy!!! I did not have pastry flour so I used regular wheat flour. I also did not have any wheat germ but did not miss it. My 2 year old chowed down on these! I had extra batter so I froze a few and they were still so good after toasting them.

Basic Ham and Bean Soup

Soaked the beans overnight, discarded the water and did the slow cooker method. I think next time I will just try making it in the pan as the beans were overcooked and made more of a creamy soup.

Downeast Maine Pumpkin Bread

4 stars but changed it to 5 when I made the following changes: halved recipe: used about 3/4 can pumpkin half oil, half unsweet applesauce no water - a nice size splash of OJ a little less then 1 cup sugar (brown and white) cut back on flour (half wht half whole wheat) and added heaping spoons of wheat germ and ground flax seed. proper measurements for spices except I added extra fresh ground nutmeg and half teasp allspice. and splash of vanilla. baked in one pan for about an hour. YUMMY!
