Creamy Chicken and Wild Rice Soup

Yum! I used more chicken broth and cooked my chicken on high in the crock pot for 4 hours before shredding it. I used shredded carrots and a larger box of Uncle Ben's wild rice mix. It was great. Next time I might buy some regular wild rice (not the boxed stuff) and cook a little extra to throw in the soup. I love wild rice and it could have used a little more.

Southwestern Black Bean Stew

Very good meal with minimal effort. I have made this several times and I find it tastes better if you substitute the tomato paste with pureed zesty chili tomatoes. Sometimes I substitute the corn with mexicorn. Also, cilantro really helps the flavor. My kids like it and everyone gets full. That is a feat in my house and deserves a 5 star rating.

Pumpkin Custard Pie

Very good recipe. I used pumpkin egg nog instead of milk and it tasted really good. The only problem was that I used a thick glass pie pan and the crust wasn't all the way cooked and it could've used 5-10 minutes more on the filling as well. I will try again!

Cousin Cosmo's Greek Chicken

Very tasty recipe. The only thing I would change is the medium heat for browning the chicken. The chicken wouldn't brown on med heat and by the time it got hot enough to brown, the cheese started melting and then there was too much liquid to brown it. I messed up and accidently used half beef broth and half chicken broth. Even though my meat didn't brown well and I used some beef broth, it was still delicious. It got rave reviews from all of our company and even my toddlers.

Baked Pesto Chicken

Wow! I was shocked at how good this tasted. Mine marinated in the pesto for quite some time. I was going to marinate it all day, but forgot we had dinner plans already. The next day I threw it in the freezer. A week later I defrosted it in cold water (they were in the ziploc bag) and cooked them per instructions. I used feta cheese instead and put it on half way through cooking time. My husband was also shocked at how good it tasted. The chicken was very tender and moist. YUM!

Slow Cooker Chicken and Dumplings

This turned out alright. I followed the recipe as is. There was way too many dumplings and it got too dry. I may try again, but I will definitely cut back on the biscuits and add a lot more chicken broth. I also had to cook the biscuits for almost 2 hours before they were done. Some of the biscuits stuck together. I used Grands biscuits and some of them puffed up pretty big like biscuits instead of being like dumplings. I rolled them out and sliced them before putting them in the soup mixture. I might try crescent rolls next time because they don't puff up as much.

Black Bean Chili

Very good chili. I did use shredded chicken in place of the mushrooms and it went very well with this chili. I did use canned corn and canned tomatoes (chili style)to make it easier. I'll probably cook the peppers longer next time because they were a little to crunchy for my liking, but my family liked this chili. I also added fresh cilantro...always a good addition!

Golden Sweet Cornbread

This recipe was good. I did add a little vanilla. My husband said he thought it was Jiffy muffins. We like Jiffy muffins and these do taste a lot like them, but I was hoping for better. I felt insulted that he thought they were Jiffy.

Slow Cooker Chicken Stroganoff

This was really good! It was so easy to make. As for the reviewers who said their chicken was dry and burnt, it was probably your slow cooker. I have the Hamilton Beach slow cooker with the sealed top and not one ounce of the margerine (I used Smart Balance) evaporated. Also, the sauce was not too thick. It was thicker, but not as thick as others suggested (again maybe their slow cooker). It tasted salty, but when it was served over pasta it tasted just right, not too salty. I shredded my chicken when I added the cream cheese and let the cream cheese sit for 15 minutes before stirring it in. I followed recipe exactly and I was very pleased. My husband, mother, and two toddler daughters liked it. My father loved it. I kept dipping in for more. Very easy recipe.
