Breakfast Pies

These were good. I wish I had frozen the extras because they went to waste. The biscuit wasn't as good later and I found myself wishing it was pie crust...okay, that's a quiche! I admit that I used homemade biscuits. I should have greased the muffin cups a lot better. It took me like 30 minutes of scrubbing to get them clean.

Mexican Bean and Rice Salad

I really love this recipe. It seems so healthy, flavorful and has such a nice crunch. It made a lot and I have happily eaten it everyday for lunch this week as well as going great with our burgers the first night.

Oven-Roasted Asparagus

This is my new go-to recipe for asparagus. Everyone loved it, I was glad I made a ton. I forgot the lemon juice we were so excited to eat, and I was out of garlic so substituted garlic powder.

Garlic Green Beans

Delicious! I used fresh blue lake green beans boiled in salted water for about 4 minutes then ice water bathed. I used about 1 T olive oil and butter each , about 2 tsp chopped garlic and skipped the cheese. Wonderful for Thanksgiving dinner. Thanks.

Fresh Southern Peach Cobbler

WOW, I'm going to buy really ripe peaches more often just so I can make this! I used all brown sugar in the topping and forgot the cinnamon sugar- but it didn't need it. With fresh, chunky peaches and good vanilla ice cream I'm not sure I can think of a dessert I'd rather eat...and I LOVE chocolate so that's saying something!

Campfire Breakfast Sandwich

No campfire so I tried it on the Foreman grill. The second time I skipped the cheese and butter which you can totally get away with on a Foreman for some reason. It reminded me of sort of a reverse french toast, so we dipped in syrup. YUM & FUN for breakfast.

Pizza On The Grill I

The fresh basil made this recipe, that and the fact that the house is still cool and we are eating delicious pizza in the middle of summer helps too. I followed the crust recipe and used mostly whole wheat flour. Topped with our own toppings. Be ready to top quickly after flipping. When it seemed like the crust was done, I turned off the grill and left the cover down to really get the toppings nicely heated.

Mound Bars

I doubled this and made the coconut mixture with 3 cans of sweetened condensed milk drizzled over 3 cups coconut between the two. It was really good. Next time it needs almonds since I'm more of an almond joy girl than mounds. Super rich!

Blueberry Cheesecake Ice Cream

I made this as strawberry cheesecake ice cream for a church picnic. It was fantastic. I used the cheesecake pudding and graham crusts. I got a little creative making the strawberry gel (I used Junket Danish Dessert). I can't wait to try the blueberry! Many compliments and folks coming back for seconds.
