Pesto Sauce

Reviewed: Aug. 7, 2011
I grow a lot of basil in my garden so this was a great thing to make to use it all up. I agree with the others that this recipe does not have enough basil in it. I used about 2 cups packed of basil & I used pine nuts because I had them. I omitted the salt altogether but it did need some in the end. It was delicious! I will freeze it (with the cheese already in it) like someone else suggested... in ice cube trays and then transfer them into zip lock bags and use by cubes when needed. Very, very easy to make & very good just add more basil and you're all set!

Pineapple Grilled Pork Chops

Reviewed: Aug. 2, 2011
I prepared this just like it said and it came out delicious! I was very surprised because it doesn't "look" that way at first. I bought the really thick pork chops and they came out extremely tender. I don't recommend marinating them longer than 24 hours, that's the only mistake I made. I left them in there longer (about a day and a half) and they started to get mushy from the marinade but that was my fault. I think next time I'll add teriyaki to it and definitely a little ginger but even if you prepare it exactly as the directions say, it is definitely good! Will definitely make again and it can't be any easier either!!!!

Sauteed Green Beans

Reviewed: Jan. 3, 2011
I used sliced almonds midway thru so they wouldn't burn and stick better. I did have to add salt & garlic powder. Did not have to use all the grease. Next time I think I will try adding onions. Very tasty.

Slow Cooker Pork Cacciatore

Reviewed: Oct. 6, 2010
I wasn't too sure about this recipe, especially made with pork but surprisingly enough... it was delicious! I didn't want to stray away from the original recipe since it was my first time making it & I was already skeptical about it. I seared the pork very quickly in a frying pan, just put it on there & took it right off, amazingly the pork was not dry at all which is one of the things I was worried about. I calculated for 6 people and I never ended up using all that sauce nor the 2 cans of diced tomatoes, it would have been way too watery, almost "soupy." I only cooked it about 6 hours on high and that was more than enough time, I can't imagine cooking it 8+ hours! I think it would have tasted better with chicken but it was a nice change with the pork as well. Hope this helps!

Campbell's Kitchen Easy Chicken Pot Pie

Reviewed: Sep. 7, 2010
This is a FABULOUS, super easy and fun meal to experiment with. I basically went by the instructions except I went to the deli and had them slice chicken for me (to a #10) and cubed it at home. (I use 3 slices for a serving of 6 & it's more than enough) This little step saved a lot of time! I also use different soups; cream of chicken & cream of potato, etc... but I always use 2 cans & on the veggies I may use 1 or 2 bags, it depends how large my pie plate is. I'm going to try a different crust today because I like a more flaky crust. There's really not much to it and everyone will love it!!! A winner!!!!
