Angel Hair with Feta and Sun-Dried Tomatoes

This was a great recipe! I did alter it just a bit by leaving the cilantro out and adding asparagus. I steamed the asparagus for just a few minutes, drained the water then added the garlic and sun-dried tomatoes. After stirring that together I then added it to the pasta along with the other ingredients. Next time I will add fresh basil to the top just before serving. Can't wait to make this again! Its such a fresh tasting dish.

Bacon Cheese Frittata

Great base for making all kinds of frittatas. My favorite variation is to caramelize a white onion, use a medium cheddar (or sharp if you want a little more cheesy Bite), add a dash or two of Tabasco and cubed, smoked ham. My sister has used the same base and added Feta cheese and spinach and left out the bacon, green onions and cheddar. Yum!

Overnight Blueberry French Toast

Great recipe! I made it for my family on Father's Day and they loved it! I opted for Texas Toast instead of french bread or day-old bread as the recipe calls for. I added a touch more vanilla too. Most wonderful french toast I've had in a long time. Will definitely make again.

Apple Bundt Cake

I have been making this cake for years now. I have modified it a little though. I use two types of apples - granny smith and honey crisp when I can find them. But any two will do - it just gives it more of an apple taste. I also use a tad bit more OJ and vanilla. Once the top begins to get brown, I normally put foil on top so it doesn't burn and become hard. I have had such success with this cake that I have been asked to bake and give as gifts and people at work have offered to pay me for my services!
