Easy Ham and Swiss Casserole

Easy to make. I omitted white wine since I had none on hand, added seasoning salt, sauteed onion and some frozen peas. Delish! I have also made this with canned ham and it worked extremely well.

Judy's Strawberry Pretzel Salad

Wow! Delicious! The pretzel layer was so good! Everyone asked what it was made out of and were surprised it was pretzels. I found the pretzels were crumbly when I added the cream cheese layer, but it still held together alright when serving. I doubled the jello, but only added 3 cups total of water. It had lots of flavor and still held together well. Looked beautiful too! Rave reviews from my BBQ guests! It is nice when a simple and easy recipe is such a home run!

Eggplant -- Easy, Good and Tasty

Devine! This was my first time trying eggplant. I added a bunch of minced garlic to the tomatos & let them marinade a bit in the Italian dressing before adding to the tops of the eggplant, and I substituted Parmesan out of a shaker. As recommended, I baked the eggplant first and added toppings near the end. As my 4 year old son ate it, he kept exclaiming, "I love eggplant!"

Best Beef Dip Ever

Believe the title of this recipe! It really is the best ever. I make this for big family events where I just don't want to worry about cooking all day. It is a no fail beef dip! Very forgiving recipe to modifications too. I have added a can of beef broth to the mix as well- also good. I have omitted the bay leaves and rosemary and found that it is still great! I usually serve it on onion buns with slices of swiss cheese.

Chicken Borscht

This was delicious. It was hearty and aesthetically looked great too. I modified a few things- I used bagged cole slaw for the cabbage and used beets I had prepped & frozen previously, which sped up the process. I also substituted red wine for the red wine vinegar. This soup has a delicious flavor! Even my husband, the self proclaimed non-vegetable eater, went back for seconds!

Rhubarb Pudding Cake

I made this dessert because of all the positive reviews and good pictures. The recipe looks like nothing special and even as I watched it in the oven baking, I thought it was nothing special. Let me tell you though, this is one of the best desserts I have ever eaten! So delicious!!!! I had less than 3 cups of rhubarb and adjusted the sugar to less than suggested and it still turned out fabulous. I like how it was quick and simple to prepare and used such basic ingredients too. We ate it with Cool Whip, but ice cream would be great too. I can't wait to serve this to guests and show it off. I might have a problem with sharing it though. :) Added later: This has turned into my most requested dish. It is very forgiving on quantities of ingredients, and an "eyeball measurement" is all I need to do. I have found that my rhubarb requires less sugar than the recipe suggests and still tastes great if you don't use cinnamon. Just as terrific with frozen rhubarb too!

Easy-Bake Cheddar Biscuits

Simple and Delicious! This the best cheddar biscuit recipe I have tried. I was glad to find that it really was only 10 minutes of prep for this recipe and with a quick cook time, I added them to a meal at the last minute. I am looking forward to trying out the suggested alternatives in the footnotes. Editing to add- I adjusted the flour by doing half and half white and whole wheat. It was just as good or even better. I just love this recipe!

Karrie's Yorkshire Pudding

I think this is a tasty recipe. I have made these a couple times with mixed results. The problem was me, not the recipe, though. I didn't realize you cannot open the oven door to peek! No matter how much you want to see if your Yorkshire pudding is rising, you must never open the door! It causes your pudding to fall. I have made these as a pudding and also in muffin tins as popovers. I enjoyed the popovers more.

Apple Loaf

Delish! I made some changes as suggested by other reviews. I used more apples, leaving the peels on to shred. I used oil, added cinnamon too, and substituted pecans for walnuts because that was what I had on hand. I also used 1 cup whole wheat flour with 1 cup white all purpose. I really liked the flavor and the wholesome taste to it. This is going to be a staple in our house. Yum yum!

Banana Loaf Cake I

I wish I could compare this recipe to the other banana bread/loaf/cake recipes on this site but this recipe is so awesome, I have not even tried any others. I make this banana loaf at least once a month for the last few years. I don't adjust the recipe at all, though I often double it. It is delicious and moist- the right amount of sweet and flavor. So simple and easy to make too.

Zesty Porcupine Meatballs

I think this recipe is just a really good fill-you-up meal all in itself. I think it could have used more zip and I'll add some ketchup and brown sugar to the sauce next time just to give it a little more kick. I did not make enough sauce even though I made extra. I will definitely make more sauce next time.

Busy Mom Peach Cobbler

Best Peach Cobbler recipe I have had. I love Peach Cobbler and have tried tens of recipes that aren't nearly as good as this one. It is so simple too! I love the warm chewiness of this cobbler. It is starting to become a signature dish of mine and I am getting requests to make it now. :) I cut the sugar in half and omitted the sugar in the peaches and also on top of the cobbler as it cooked. It was totally not necessary. I also used all purpose flour and added 1 1/4 tsp of baking powder to the batter.

Quick and Easy Pizza Crust

I tried this recipe strictly because of the positive reviews. I was so pleased with the crust and the pizza. It turned out so well. Nice and crisp but still soft and chewy. This is a great simple recipe and the pizza was super fast to make.
