Apple Honey Bundt Cake

Reviewed: Sep. 18, 2009
This recipe was really easy and though the cake seemed heavy when I picked it up, it's really moist and yummy. I was worried it would be too sweet based off of other reviews, but I ended up being 1/4 cup of honey shy, creating the perfect balance of sugar and spice. I also subbed in apple sauce for some of the oil, which I think added to the nice apple flavor of the cake.

Quinoa Pudding

Reviewed: Oct. 11, 2009
I used coconut milk in lieu of whole milk (mostly because I didn't want to go to the store to buy milk). The result was extremely thick, creamy pudding. I also added honey, brown sugar, real maple syrup, and cinnamon to try to disguise the flavor of the quinoa, which was a bit overpowering. Still yummy, but not quite as dessert-like as I would have hoped.

Spicy Brown Mustard Chicken

Reviewed: Apr. 4, 2010
I used Dijon instead of spicy mustard and it was pretty flavorful. Only thing I will do different next time is use less butter. It was a but greasy.

Bread Machine Challah II

Reviewed: Sep. 19, 2011
I love this challah recipe. It is easy and comes out beautifully. I usually add a bit of extra honey and subtract a bit of the sugar. I think this helps keep the bread sweet without becoming too sweet. Sometimes I have to add extra flour to keep the dough from getting too moist. While the dough doesn't braid as easily as other recipes I've tried, the bread tastes better and the braid looks better after baking then some other doughs I've tried with an easier to braid consistency.

Alaska Salmon Bake with Pecan Crunch Coating

Reviewed: Sep. 19, 2011
One of my favorite recipes. I love to make this when I have company because it looks nice but requires very little effort. This is also a great recipe for people who do not like salmon but want to eat salmon. I do not like salmon, but I love this recipe. I also made it for a friend who is not a salmon fan and he also loved it. I usually leave out the bread crumbs to make it healthier and have even on one occassion left out the butter. I don't think omitting these ingredients negatively impacts this dish. I also usually add extra honey and less mustard.

Extra-Easy Spinach Lasagna

Reviewed: May 24, 2012
I've tried, unsuccessfully to make lasagna several times in the past. When I found this recipe, I decided to give it another go, and it was the best lasagna I'd ever made. And very easy. I added in browned hamburger meat to the sauce but kept all of the other ingredients the same. I also upped the size of the lasagna to a 3qt pan. I found, with the exception of the noodles, that this could be done without having to alter any of the quantities. The noodles were upped to 6 for this.

Slow-Cooked Chili

Reviewed: May 24, 2012
I'm not a chili fan, but my fiance kept asking me to make chili. When I found this recipe I decided to give it a go and I was really surprised. It was very easy to make and the chili was actually really good. I ended up adding an extra can of beans to better balance the meat to other stuff ratio and I added cumin and crushed red pepper. The chili was the perfect consistency and converted me. I'm now a chili eater.

Blueberry Sauce

Reviewed: Jan. 21, 2013
The orange juice was a bit of a problem. I made the sauce the night before, as some people recommended, and reduced the orange juice to 3/4 cup, but it was still very strong. It overpowered the blueberry flavor. The sauce was also a bit too thick. Next time I will significantly reduce the corn starch.

Todd's Famous Blueberry Pancakes

Reviewed: Jan. 21, 2013
I was really excited about these pancakes based off of the reviews, but they did not live up to my expectations. They were a bit rubbery, not fluffy like many people said. Next time I may just go back to using pancake mix.
