Roasted Tomato Salsa I

Reviewed: Sep. 19, 2009
Very good, although I used 6 cloves of roasted garlic and still didn't taste any garlic, so added 1 clove fresh. That did the trick! I also followed other reviewer's recommendations to core the tomatoes and jalapenos before roasting. I also seeded the jalapeno, which I later regretted when the salsa needed more kick. No matter, I just added another roasted, seeded jalapeno and got just the right amount of heat. Definitely give this a try!

Ham and Bean Soup

Reviewed: Oct. 13, 2009
Delicious! I modified it just a little, based on our tastes and pantry: kielbasa instead of bratwurst, added 3 new potatoes 1 hr before completion and a bit of crushed red pepper flakes because we don't have Tabasco. I thought that there wouldn't be enough seasoning based on the number of ingredients, but it has really nice flavor and a nice kick to it! Definitely a keeper and will probably become one of our favorites. Next time I'm going to try it in the slow cooker.

Chocolate Sauce

Reviewed: Oct. 23, 2009
Based on other comments, I reduced the water to a half cup (for half recipe) and boiled for 5 min. This is absolutely the best chocolate sauce I have ever had and I will never buy pre-made again. Nice consistency a few minutes after you take it off the heat, and really nice the next day from the fridge. Still thinner than store-bought, but we liked it. It has such a rich chocolate flavor! And question: I thought that you couldn't boil milk because it would curdle? So I don't understand how so many reviewers are using milk successfully. Maybe I've just screwed up heating milk in the past. I always use 1% percent milk.
