Low-Fat Blueberry Bran Muffins

Reviewed: Jun. 12, 2011
Health...yes. Taste good.....not really. But ya know, the kids ate em and didn't fuss about 'em. I did substitute the 1/2 C of apple sauce with rhubarb sauce. I thought this maybe caused the batter to be thin, but after reading some of the review, I don't think this changed the batter consistancy. Though I didn't care much for these muffins, it was a nice way to use my left over bran flakes and rhubarb sauce. I give it a 2 star since the kids liked 'em. :)

Peanut Butter Rolls

Reviewed: Feb. 10, 2011
A friend suggested I try these! Well worth the effort! I made a few alterations. I split the recipe in half and let my bread machine do the work for the dough preperations. Then after rolling out the 9 x 14 rectangle, spread on the peanut butter as instructed. Then mixed 1 cup of brown sugar with 2 teaspoons of cinnamon and sprinkled it over the peanut butter. Then proceeded with the rolling up of the dough and followed the directions in the recipe. I desired a more intense coffee flavor for the frosting, so I added 1 tsp of instant coffee to the 1/2 cup of brewed coffee. Very delicious!

Really wonderful! I mixed in a can of the pie filling I had canned and reduced the amount of apples. Was super!

Apple-Filled Cranberry Muffins

Reviewed: Jan. 15, 2010
This recipe is delicious because you first get the breadiness and sweatness of the muffin, then the wonderful texture of the apple. I don't usually like cranberry but now I do.

Sweet Potato Bread I

Reviewed: Jan. 8, 2010
Wonderful! This recipe is so moist and our family has soy and dairy allergies so I was delighted to find the recipe calls for oil instead of margarine or butter , of which I used canola oil. They are great with or without nuts. I doubled the batch and used 1/2 for a loaf and the other half for muffins. They needed to be baked for aprox. 22 minutes. Thank you for posting this delicious recipe!

Alfredo Sauce

Reviewed: Dec. 31, 2009
I served this at our Christmas dinner and it was a hit. Very creamy and full of flavor! I had prepared it the day before and refrigerated it until our meal time. It reheated very well with a little whisking as it wanted to seperate initially.
