About this Cook
I'm an 8th grade Algebra teacher living in and loving the mountains of the Eastern Sierras. I started cooking seriously about 2 years ago and have loved and hated every minute of it. I love to travel, hike and fish during the summers and read and staying outta the cold during the winters. Quality time with family and friends is always the best during any season.
My favorite things to cook
Anything new & challenging. My mom and brother always request my chocolate chip cookie recipe that I got from my mom years ago. GO figure! I love chicken dishes and anything that challenges my palate. I've realized I am a sauce person when it comes to cooking. I don't make much without a sauce of some kind.
My favorite family cooking traditions
Definitely the chocolate chip cookie making on Christmas Eve growing up with my brother. As of yet, I don't have much of a tradition when it comes to cooking.
My cooking triumphs
My first from scratch French Onion Soup! It was challenging because the timing was very different than what the recipe gave me, but I hung in there.
My cooking tragedies
Baking anything the first time. I live at 8300 feet and there is hardly ANY recipes with high elevation adjustments. Even when some recipes include them, it tends to fail the first time. So it's a hassle sometimes finding the right amount of flour adjustment. Grrrrr...

3-Cheese Pasta Bake
Just ok. Kinda bland, not too much flavor in the recipe. I do add chicken and have tried many different cheese mixes. So far, gouda is the better choice. I did make this the first time as is and added several spices after it cooked and I tasted it. This recipe has much potential!!

Chocolate Peanut Butter Cup Cookies
Talk about cookie overload. Wow, one cookie filled me up! I did omit the cocoa (don't like) and had to adjust for high elevation (I live at 8200 ft). Freezing the peanut butter cups before and after cutting helps keep the shape when being baked. If you want a rich peanut butter/chocolate chip cookie this is it!

Feta and Sun-Dried Tomato Stuffed Chicken
WOW!!! Talk about tasty, easy to make and so very impressive to look at! I have made this twice and once used black olives and then used kalamata olives. The kalamata olives give the dish an extra kick. Both were delicious, but the kalamata olives provided the added flavor boost. I did not add the roasted bell peppers on top.
