Tomato and Mozzarella Bites
My book club group loved this. Here are my modifications: 1. I marinated the cheese balls in the olive oil (my grocery store carries a combo of olive oil, grape seed oil and canola oil) along with some citrus/basil garlic spice (from Pampered Chef) for a couple of hours. 2. Then afterward I put the rest together on the skewers. I did cut a couple of the cheese balls in half so I had enough to go with the tomatoes. 3. Poured some more olive oil and the spice over the top of the skewers when I served them. Served for my book club meeting and everyone loved this.

Old Fashioned Coconut Cream Pie
4.5 really. This was a great recipe. I as well did the changes others had recommended 1 1/2 C each of Coconut Milk and Half/Half. Then I also did 1/3 C each of Cornstarch and Flour. Everyone loved this recipe. I did not do a merginue frosting but rather a whipped frosting. This pie is already being requested for the upcoming Christmas dinner at our house.

Pumpkin Turkey Chili
This was awesome. However, based on other comments, I did make some changes. I added 1 can of Ro-tel tomatoe's. This helps to give it some added kick and spice Also added the following: 1 can of vegetable broth 2 Bay leaves 1 tsp of oregano
