Peach Muffins

These turned out quite nice following the recipe as written except one substitution of apple sauce for oil. Next time I would cut out 1/4-1/2 cup sugar as I felt they were a little sweet for my taste but my husband and son liked them just as they were. Will be making again.

Hummus III

This was great! I did use 2 - 16oz cans of chickpeas and about 1/2 cup tahini. In addition I roasted about 4 cloves of garlic and added to the two raw cloves. Yummy!

Peppy's Pita Bread

I turned mine into pita chips and took them to a potluck with some hummus (from this site). They were a huge hit. I made this in my Kitchen Aid. Started with the water, sugar and yeast. I let it sit about 5 minutes until the yeast bubbled. Added the salt, oil (I used herbed olive oil) and flour and used the dough hook to mix. I only mixed until everything came together and was a smooth ball. I covered and let rise about 45 minutes - 1 hour. Punched down then rolled out into rounds. I baked as directed then when cooled I brushed with olive oil, sprinkled with garlic salt, cut into wedges and then re-baked another 4-5 minutes turning about 2/3 of the way through. AMAZING!

Bread Machine Bagels

This was my first time making bagels and they were a great hit. They did come out a little ugly, but the taste was wonderful. Next time I think I might use a glass or coffee mug to cut out the bagels instead of using my hands.

Cranberry Streusel Pie

This is a fabulous recipe. The pie was amazing. I did add the extra sugar as had been suggested. It was still pretty tart, so I would add just a bit more next time. It was the first time my family has had cranberry pie and it was the first to go! This is a definite "must have" for future holiday gatherings!

Pumpkin Muffins II

These are awesome muffins. I doubled the batch both times and instead of 4 c sugar I used 2 c sugar and 1 1/2 c honey. Yum. In addition I added a little rolled oats and turbinado sugar to the top. This recipe will be used for years to come!

Calico Squash Casserole

I have to say even with all the great ratings I was skeptical but this dish is wonderful. I had no butter crackers so I used pretzels instead, just ran them through the food processor. Sliced the carrots instead of shredding and sauteed the squash and onion instead of boiling them. Will definitely make this again.
