Mom's Favorite Baked Mac and Cheese

We really enjoyed this mac and cheese. I use spicy brown mustard and my honey always likes broccoli and ham in it too. Quick and to the point!

Crispy Baked French Toast

I didn't have the bread crumbs that were called for, so I used my white bread crumbs. They worked great, nice and crunchy.

Egg Sandwich

We use empty Smart Balance containers to cook the egg in the microwave. When the butter substitute is down to just a little around the edges, crack the egg, or 2, a tiny splash of milk, scramble. Bake in microwave for 1-2 +- minutes steering once in middle of cooking time. When finished, place cheese on top and cover with container cover, waiting a minute or so, the cheese melts quickly. Then remove cover, place toast on top turn over quickly. The egg falls right out on the toast, centered on the toast, cheese melted and ready to eat. If you need to use the container again, spread a little smart balance around in the container and use again.

Soft Sandwich Buns

I make all of our breads and rolls, and have a lot of recipes, this is totally worth trying and keeping. It makes great lady finger rolls too, for a party or pot luck. My only change is to add 1 T gluten per cup of flour, because I use regular flour, not bread flour.

Eggplant Parmesan

This was our first year to grow egg plant, and we've had a bumper crop. I didn't even know if we liked it, but we sure do! I have been trying all of the recipes I can find. I had a large egg plant so I could do more than 1-2 layer. I put sauce on the bottom of the dish then layered egg plant, tomato slices parmesan cheese (didn't have mozzarella) used cheddar mix next,with more sauce. Did this for 4 layers, larger dish ending with cheddar mix and parmesan. Covered and cooked as directed. It was wonderful!

Playgroup Granola Bars

I liked this recipe, changed to my usual-canola oil and I'm bad, but I add at least 1 cup chocolate chips and 1/2 cup of chopped walnuts they both are a must in my home. The chips +nuts change the cooking time, but you have to watch them at around 15 min so they do not over cook or brown too much. I've used 1 cup(+) of M+M's too. If you add more chocolate, which I have done my husband calls the cut batch candy bars!

Veronica's Apple Pancakes

I mixed the dry ingredients the night before and I mixed the chopped the apple, melted "smart balance",(instead of butter) egg and milk in the morning. I increased the cinnamon to 1/2 teaspoon and increased sugar to 5 teaspoons. These were great pan cakes.

Molasses Cookies

My husband has a childhood memory of Molasses cookies. I have been searching and trying the recipes that I have found. Miracle of miracles!!! My search is over! This must be it, because he loves the cookies. The one thing that he said that his Mom used to do, and I also do now is leave some of the cookie doe in the frig, so you can have a few cookies anytime you want, or anytime your oven is on! We just love 'em!

German French Toast

Quick, easy, and a little dif. taste I used homemade bread, because I make all of our bread(not bread machine either)so I got 6, not 8 slices before the egg ran out. As far as "condiments" None needed! a little salt and pepper in the egg mixture, and you are good to go!!
