Rosemary Shortbread Cookies

These are wonderful cookies that are a bit different. I rolled my dough in logs (like another reviewer had suggested) and was thrilled with the results.

Amariette Cookies

These are wonderful! I had some egg whites and some sliced almonds I wanted to use. I am so glad I found this recipe. I put my sliced almonds in the blender to grind them and it worked great; the only thing is that my cookie dough was so soft there was no way I could form balls. Dropping the dough by teaspoonfuls onto parchment covered cookie sheets worked very well; since I did not want to roll them in extra sugar anyway. BIG HINT: do not remove the cookies from the parchment paper until they are cool; if not they fall apart! Connie thank you for sharing!

Plum Quick Bread

I did make a few changes: 1. added 1/2 teaspoon of cinnamon to the batter, 2. did not make the topping, 3. added a few chopped walnuts to the batter, 4. added the zest of a small lemon (instead of 1 teaspoon grated lemon peel), and 5. baked in 4 small loaf pans. I really appreciate Gloria sharing her wonderful recipe!!

Lite Carrot Cake

Very good with the following changes: used 2 cups carrots, plain non fat yogurt instead of buttermilk, added 1/2 tsp each nutmeg, ginger, and allspice. It tasted just like the fat loaded traditional carrot cake to me.

Mango Muffins

I did take the suggestion of previous bakers and added 1 t. baking soda and 1 t. baking powder and cut back the oil and added applesauce. Also I used half all-purpose flour and half unbleached all-purpose flour. While warm from the oven these are some of the best muffins I have ever eaten; at room temperature they are still great but not quite as wonderful. Nancy thanks for posting this great recipe!

Very good. I usually don't add the frosting to cookies but this recipe does benefit from the frosting, although I only made half the recipe for the frosting it was plenty. Betty thanks for posting!
