Baked Asparagus with Balsamic Butter Sauce

My new favorite asparagus recipe! I did not want to dirt another sauce pan so I melted the butter in the microwave in a serving dish and added the soy sauce and balsamic vinegar and then tossed in the asparagus.

Raspberry Almond Coffeecake

I did not use the 3 tablespoons of brown sugar on the raspberries and I used frozen raspberries. I think it would have been better if I had used fresh fruit and/or added the brown sugar. Thanks for posting!

Walnut Pear Coffee Cake

Baked in a 9X13 baking pan, made 2 times the topping/ filling and used 4 pears. It was a challenge to get the batter to cover the pears but it was worth it! Great recipe. Thanks for posting!

I added a full cup of butter as Lorrie suggested and baked the base for 15 minutes before adding the date filling. They cut well and taste great! If you like dates you should try this recipe. Thanks Michelle for posting this great recipe.

Apple Strudel Muffins

I followed the recommendations of other reviewers (shredded 1 cup of the apple and chopped 1/2 cup of apple. Added 1 tsp. cinnamon and 1/2 tsp. nutmeg to the batter, and 1/2 cup white, 1/2 cup brown. Used the 1/2 cup butter but also added a couple of heaping tbsp. of applesauce.) They are wonderful!!!! Thanks to the person who posted this recipe and to the reviewers too!!!

Magic Mango Bread

I added 1 teaspoon of baking soda, 1 teaspoon of lemon juice, and pureed half of the mango as others had suggested. I also used only 2 tablespoons of butter and the rest coconut oil (no vegetable oil). I baked them in muffin tins. Wonderful!!! Thanks for posting this great recipe!

Strawberry Bread

I followed Amy's suggestions (added 4 cups of strawberries: 2-pureed and 2 sliced), cut the oil down to 3/4 cup, and only used 1.5 cups sugar). I was very happy with the recipe - you can really taste the strawberries! Thanks Ellen and Amy!

Lemon Lover's Pound Cake

Very good. I used fat free yogurt instead of sour cream. My only problem was that it was a bit doughy even though the cake was on the verge of burning on the bottom. Maybe because of my substitution of yogurt.
