Buttermilk Chocolate Cake with Fudge Icing

I didn't make the cake, only the frosting. I made a box mix sheet cake, left it in the pan and poured this over it. FABULOUS! As suggested by other reviewers, I doubled the recipe and I let it cook on low for a few minutes to melt the sugar. The consistency is PERFECT, not gritty at all. Definitely will be using this in the future.

Baked Chicken Nuggets

I used milk and vinegar as suggested instead of butter. I also didn't add any seasonings because the breadcrumbs were seasoned. I didn't cut mine into nuggets, but used precut chicken strips. I turned them half way through baking. They turned out crispy and juicy. Next time I'll try adding a little more seasoning though. I'm thinking a tbs of Italian Herbs seasoning would do the trick. I served this with marinara sauce.

Spinach-Stuffed Flounder with Mushrooms and Feta

I doubled this recipe and made a few small changes. I sautéed the mushrooms in 2tbs butter with 1tbs minced garlic. I used frozen spinach (measured out on my kitchen scale to 16 oz), thawed and pressed. I used a couple handfuls of Feta. I sprinkled Ms. Dash Lemon Pepper seasoning over the top of the rolls. Delicious.

Artichoke & Spinach Dip Restaurant Style

I used double the Mozzarella cheese and a bit more Parm. I've made this MANY times and everyone LOVES it. My boyfriends says it's better than any you'll get in a restaurant.

Chickpea Macaroni Salad

I used 2c macaroni and added a chopped yellow bell pepper and 1 small cucumber chopped. I followed the rest of the recipe to the letter. I had to get out a bigger bowl to hold it all lol. VERY good.

Sour Cream Chicken

The basic recipe seemed boring so I took the advice of others. I used cream of mushroom soup, I added in 1 tbs minced garlic, 1/2 chopped onion, and 1 pkg (10oz) frozen spinach, thawed and drained. Came out YUMMY!
