Awesome and Easy Creamy Corn Casserole

Curried Vegetables

I *love* this dish; not only is it easy to make, but the variations are endless! For example, last might I used two red bliss potatoes instead of the four Yukons, and besides the eggplant added yellow squash, mushrooms, half a vidalia onion, and yellow pepper. I was also going to add cauliflower but wasn't sure how that would work out, but now that I've read how many people have done just that, I'll be sure to give it a whirl next time! I forgot the jalapenos, though, and it really didn't impact on the flavor at all. And yes, it *is* even better the next day!

Fat Free Mini Prune Honey Muffins

Simply gooeylicious! I've even devised my own variation: substituting spelt flour, and adding 1/4 cup of flaxseeds to the mixture (add another 1/2 cup of water to compensate for flaxseed expansion). Delish!!!

There's one word to describe this dish: PHENOMENAL!!! Thank you, Pyromommy, for a wonderful, tasty and above all, EASY recipe! (I did find it a bit on the mild side for my taste, but that's a plus for the first time one makes any dish, as you can punch it up next go round by increasing the jalapeno to your taste.) Bravo, Pyromommy! And thanks again.

Red Lentil Curry

A truoy great recipe; you can bet I'll be making this one on a regular -- like every week! -- basis. Made a couple of adaptations, though; used diced canned tomatoes rather than puree (I would imagine that diced fresh tomatoes would be good as well). I also used cumon seeds instead of cumin powder, adding the seeds to the hot oil along with the onions. Superb!

Apple Bundt Cake

Absolutely perfect! I did tweak it a bit, based on a couple of suggestions found here -- used only one cup of white sugar and for the other cup used brown; added more apples (I used three large ones); and rather than layer them mixed them throughout the batter. Can't wait to make it again next week!
