Mini Meatloaves

This has become a major family favorite!! My two picky kids (age 2 and 4) both gobble this up with no complaints. I recently tried substituting ground turkey instead of beef, and I thought it was just as good, if not better. LOVE THIS RECIPE!!

Bacon and Potato Soup

I thought this was pretty good - not my favorite, but good enough to make again. I was out of celery (and don't care for it much anyway) so I threw in a handful of fresh chopped parsley and that was a nice addition. I also added a couple extra pieces of bacon (obviously). And after the potatoes had simmered, I mashed them lightly with a potato masher, leaving plenty of chunks but mashing just enough to give it extra thickness and texture.

Balsamic Roasted Pork Loin

I've made this a couple times now, and it is delicious! This time, I diced up some potatoes and carrots, tossed them with a little olive oil, lemon juice, and italian seasoning, and baked them along with the pork loin. The potatoes and carrots absorbed some of the extra marinade, and they were even tastier than the pork itself. Yum!! This made for an easy, hearty dinner.

Veggie Skewers

Wow! This was so simple that I was actually surprised by how delicious it was. I doubled the marinade recipe and also brushed it on some frozen chicken breasts I put right on the grill. I also used red bell peppers instead of mushrooms. Quick easy summer meal! I will be making this a lot.

To Die For Blueberry Muffins

These were perfect! I used brown sugar for the topping as recommended, and when they came out of the oven I was afraid they were going to be too crispy on top and too soft in the middle. But they were AMAZING!!! I used 1/2 blueberries, 1/4 raspberries and 1/4 marionberries. I just ate the last one (they were fabulous re-warmed in the toaster oven days later) and now I am sad. Must. Make. More.

Rich Chocolate Frosting

SO rich and delicious! I used this for my nephew's birthday cake and liked it so much I used it for my son's 2nd birthday as well - with rave reviews both times. The only changes I made were that I set part of it aside and added some cream cheese for the layers of the cake, which was extra yummy! And for my son's cake, I added cinnamon which complimented the flavors nicely. With adding the cream cheese, it gave me enough to frost a 3 layer cake and I saved the extra and frosted a batch of cupcakes a few days later. Couldn't let it go to waste!

Amish Breakfast Casserole

Made this for a special birthday breakfast for my hubby, and we loved it! I did a few things different...I omitted the onions (yuck!), used pepper jack instead of swiss, and added a 7oz can of mild green chiles. I also used 8 eggs as some other reviewers recommended. Also, after I cooked the bacon I drained all but a little of the grease and sauteed the hash browns for a few minutes. Absolutely delicious!

Best Chocolate Chip Cookies

WOW. These are the BEST!!!!! My husband actually emailed me at work to tell me they tasted even better the next day. I was low on chocolate chips, so I decided to make a 1/2 batch. They turned out amazing. I love that the dry ingredients don't need to be combined in another bowl - makes for easier clean-up.

Mom's Zucchini Bread

Best zucchini bread I've tried! I substituted applesauce for 1/2 the oil as was suggested. It was especially tasty right out of the oven with the crust still a little bit crisp. This is my new standby for the zucchini I get from my in-laws. Yum!

Jumbo Fluffy Walnut Apple Muffins

So yummy!! I made these once for a friend of ours, and now he will do ANYTHING for a batch of these muffins. For the topping, I use my old standby BH&G fruit crisp topping because it has oats and brown sugar and I just like it better.

Oranged Cranberry Sauce

Yeah, so I added too much water. Next time I'll hold down the cranberries to make sure I don't add too much. I had to boil it for over 2 hours and then it still didn't seem very gelled - but by the next day it was better. The taste is fantastic!

Cinnamon Plum Jam

It turned out very delicious - love the flavor - but didn't gel properly. I'll be giving it out to friends this Christmas labelled as "Cinnamon Plum Sauce." It's good on waffles!

Golden Rum Cake

Butternut Squash Soup

Easy and delicious! I baked the squash first, and used 1/2 the cream cheese as others suggested. I also used oregano instead of marjoram, and a blend of onion, garlic, and shallots (pre-diced from Trader Joe's). It was quite tasty! I think you could tweak the spices easily to suit your own taste.
