Mojo Grilling Marinade

I didn't have any orange juice, however I did have one very ripe tangerine so I juiced it along with 2 limes...replaced the hot sauce with crushed red pepper flakes and added a pinch of table sugar b/c I really like the way marinades with sugar in them caramelize on the grill. Otherwise, I followed the recipe exactly and it was fantastic! Used it on steak tonite, but can't wait to try on fish! Thanks!

Mama's Asian Chicken and Rice

This was definitely not as good as I anticipated. I followed the instructions exactly and the end result was far too sweet (and I'm a sugar-holic) and the 5 spice (which I normally love) was overpowering. However, the chicken cooked perfectly in the sauce and it thickened beautifully. Bottom line though, my fiance and I ate it mainly to not let it go to waste, and I will not make this again. Disappointed.

Mexican Chicken Corn Chowder

This is a DELICIOUS soup! I've made it twice. The first time, I followed the recipe exactly, and it was great. The second time I fried about 6 slices of chopped bacon, then sauteed the onions and garlic in a bit of the bacon fat. I omitted the chicken, used one can of chicken broth in place of the water/bouillon, increased the cumin to 1 tsp, used 2 cans of creamed corn and used pepper jack cheese in place of monterey jack. I still added the cream, green chilis and also added a dash of crushed red pepper. This version was outstanding. Next time I will also add a bit of shrimp. Definitely a keeper!!

Black Bottom Cupcakes I

These are easy AND delicious...my two favorite things in a recipe!! The chocolate portion is so moist and just the right amount of chocolate. I only had regular size chocolate chips on hand, so I decreased the amount to 1/2 a cup..however, next time I will only decrease the amount to 3/4 cup if I use reguale size chips again. So yummy and rich no frosting is needed!!

Pumpkin Cheesecake Bars

These are so-so. Tastes more like pumpkin pie...couldn't detect anything resembling cheesecake. Also, really did not like the crust at all...in my opinion, the use of the pumplin pie is a bit heavy-handed. Will not make again.

Gourmet Sweet Potato Classic

This was okay, but not as good as I was expecting. The sweet potato mixture was a little bland. The pecan topping was delicious, however, I will keep searching for a sweet potato casserole recipe.

Mouth-Watering Stuffed Mushrooms

Delicious! I only used 1/2 of the cream cheese though, and it was still plenty. These are sooo easy and make a wonderful vegetarian dinner when served with a green salad and warm rolls!

Best Cream Of Broccoli Soup

I only gave this 4 stars because I made a couple of changes to the original recipe. I used 2 cans of chicken broth which was about 4 cups. I also added one cup of grated sharp cheddar cheese to the flour/butter/milk mixture before it was added to the broccoli pot. I seasoned with salt, black pepper and a pinch of cayenne. In my opinion, this way is 5 stars!

Florentine Artichoke Dip

I only used one bar of cream cheese and also added 1/3 cup sour cream in addition to the mayo and parmesan.. I used a can of plain artichoke hearts, extra garlic, one box of spinach and the juice of 1/2 a lemon. I also added a dash of salt and black pepper. For the last 5 minutes of baking, i put it under the broiler to get the top brown and the edges bubbly and crispy. It was amazing, better than anything I've ever got in a restaurant! I served it with a platter of yellow corn tortilla chips and sea salt bagel chips. Yummy!!

Baked Potato

Instead of pricking the potato, I slice down the middle the way they're served in restaurants, then wrap in foil. I baked them for 1 & 1/2 hours in a 425 degree oven. they came out creamy and tender!

Classic Macaroni Salad with Real Mayonnaise

The name of this recipe is perfect...this is truly a classic macaroni salad! I personally do not care for elbow macaroni as I feel they get too mushy after cooking and mixing, so I substituted a 12 oz. box of bow tie pasta. Everything else I followed perfectly, however, after tasting, I added about a 1/4 - 1/2 teaspoon more sugar. All in all, a wonderful recipe that can be tweaked in many ways to suit your personal taste. 5 stars!!!

Tomato-Cream Sauce for Pasta

Use crushed tomatoes instead of diced and don't substitute anything for the cream. doing it this way will give you a thicker sauce....no flour needed!

Cream Cheese Pound Cake III

A very good pound cake, however, I tasted absolutely zero cream cheese. So if you're wanting a cake with a cream cheese flavor, this isn't going to do it. Maybe add a cream cheese frosting.

Brooke's Best Bombshell Brownies

Absolutely to die for!! I took another reviewers advice and used equal parts brown sugar and white sugar, mostly because I love the caramel-y flavor brown sugar adds. I also added a cup of chopped pecans. Then I used the coconut mixture from the Coconut Macaroon Brownie recipe from this site. It tasted like the most decadent almond joy-in-a-brownie EVER! One note, this brownie recipe uses chocolate chips, which melt when baked. So if you're doing the toothpick test for doneness, keep in mind that the chips melt when hot, but set back up when cool. So if you have a melty chocolate on your toothpick, it doesn't necessarily mean the brownie isn't done. Mine took 50-55 minutes. Chocolate heaven!!!!

Delicious Moist Poppy Seed Cake

This was pretty good....I was expecting it to be a bit more like the lemon poppy seed cake at a popular coffee house chain...it wasn't quite the same though. Next time i would try to incorporate more of a lemon flavor in the actual batter, maybe by adding lemon juice AND the zest, and I would also like it to be more moist. My fiance loved it though :)

Lebanese Lemon Salad Dressing

Sunshine for vegetables!! I made a few changes to suit my personal taste. First, you must use fresh lemon juice. Then I added 2 1/2 tsp. of honey. I felt that 1 tsp. of salt was borderline too much, so I recommend starting out with less and tasting as you go along.

Waffles I

Delicious! This recipe is sooo good. I doubled the recipe and added an extra tablespoon of sugar. We had plenty of batter left over, so as the recipe indicates, I left it covered in the fridge. They were twice as good the next morning!!!!! From now on, I'll always make the batter at least a day in advance.

Absolutely delicious! You may not need to cook them for the full 12 minutes...I suppose it depends how soft you want them. These are so good straight from the over, I recommend you make this right before you serve dinner.

Awesome Slow Cooker Pot Roast

This is what comes to mind when I think of pot roast! A lot of other pot roast recipes on this site are what I consider beef stew...big difference. In my opinion, this recipe is perfect as is! Sometimes I add a sliced onion too. I have made this recipe many times on the stove, before I had a slow cooker. Comes out fine.
