Southern Yank Pulled Pork BBQ

Sauce a little thin; transferred it to a skillet and thickened with cornstarch. Tastes awesome!

Cheesy Calzones

I added a scant tsp. Italian seasoning and a few shakes of garlic salt to the cheese mixture. I also brushed the tops with egg whites and sprinkled with a little more garlic salt. Yummy!

Pork Chops for the Slow Cooker

Very tender. I only used to pork chops, and cut the soy sauce in half but left all other ingredients the same. Cooked on high 90 minutes then low for 2 hours.

Bill's Sausage Gravy

I've been making gravy for years the way my mom showed me, which is mostly "eyeballing" it and using only the pan drippings. The butter made this EXCELLENT and having more precise measurements meant no lumps. This is the only way I will make gravy from now on!

Slow Cooker Stuffing

Fortunately I made double the recipe on this. Half went in the crockpot, half in the oven. The oven-cooked stuffing was a very good texture, if just a little heavy on seasoning. The crock pot stuffing was a total failure. It turned into a soupy, soggy, wet mess.

Taco Seasoning I

I don't think I'll ever buy packaged seasoning again. These are spices I always have on hand. I use about 3 T. per pound of meat. There is a little left over, but I just save it until I make it again. I cut back on the salt a little.

Slow Cooker BBQ Pork Chops

The chop right out of the pot was very tender, but a little dry. Spooning some of the cooking juices over it helped. Some more BBQ sauce would have helped too but I used it all in prep. I have two chops left that I am going to use the meat in a rice dish.

Onion Meat Loaf

I used a packet of taco seasoning instead of onion soup mix. We both really liked it. The loaf needs to sit and rest a few minutes; we ate it right out of the pot and it crumbled. The leftovers were easy to slice.

Pork and Green Chile Casserole

Very good! My only substitution was sharp cheddar instead of colby cheese. I took suggestions of others, making it in a large skillet and just popping that in the oven, as well as trying it with Scoops chips. Both were excellent ideas. I served it with one of my favorite sides, fried plantain sprinkled with nutmeg and kosher salt, and topped it off with a margarita.

Pork Fried Rice

I used some leftover pork in this. Even though it said it served two, We had plenty leftover, eating an egg roll on the side. I will definitely make it again, trying different meats or even tofu.
