Jeanie's Falafel

Fantastic falafel recipe! I bake these at 350 for about 15 minutes instead of frying. They are a bit dry, so I add a bit of water or vegetable broth if I have it handy. Sometimes I cut the cumin back and add garam masala. I may add some shredded carrot, too. These are great topped with tamarind chutney!

Garbanzo Tomato Pasta Soup

I made this soup as is (minus the thyme because I was out) and it was FANTASTIC! Will definitely make it again. I may add some carrots and celery next time, but it is awesome the way the recipe is written, too.

Stuffed Peppers My Way

Love this recipe! Only things I changed were red peppers instead of green (because I like sweeter peppers) and I used freshly grated parmesan cheese because I don't care for feta. I've made this recipe twice now and absolutely love it!

Fluffy Peanut Butter Frosting

Love it! I made this for the first time tonight, but it certainly won't be the last! I only needed 2 tablespoons milk and I used vanilla rice milk because that's what I had on hand. Other than that, I followed the directions just the way they are written and my frosting turned out fluffy and perfect. Wonderfully spreadable and not at all grainy. I will make this one time and time again!

Spicy Vegan Potato Curry

This is a great recipe and very easy to make. I love spicy food, but the amount of cayenne pepper was a bit much for me - I think I'll try 3/4 tsp next time. I used lite coconut milk and stirred in 2 - 3 tbl ghee at the end. The ghee helps to tame the spices a bit and gives it a richness that nothing else can. Will make this one again and again.

Pretzel Turtles

I made these for my family Christmas party this year and everyone LOVED them! Like other reviewers, I put mine in the oven for just 3 minutes and that was plenty of time. I will definitely make these again and again.

Banana Tortilla Snacks

Yum! This is now my favorite breakfast! I just do the tortilla, pb and banana. It travels well because the peanut butter kind of 'glues' the tortilla closed, making it easy to take out the door and eat in the car on the way to work.

Chili Potato Burritos

My husband and I cannot get enough of these! We just add black beans and corn and follow the rest of the recipe as written. I'm veg, so I use Daiya cheese in/on my enchiladas, then they're a delicious vegan meal. Thank you for sharing this recipe!
