Best Spanish Rice

I make the same recipe, but add 2 cloves of minced garlic and often I add some cumin and chili powder to boost flavor to taste. Easy, fast and good!

Mexican Lasagna Lite

Why use low-fat on this dish? Use what tastes good and enjoy a smaller portion. I have made this dish for years (called it "stacked Enchiladas")using beef or pulled pork, green enchilada sauce or red but I never compromised flavor for low-fat.

Sugar Zwieback

It's getting harder to find Zwiebacks and this recipe works fine. I use these cookies as a crust for my cheese cake. I ditched the nutmeg and some of the sugar and they work well!

House Fried Rice

My local take-out place makes the best "house fried rice" I have found. The one flaw in this recipe is that to avoid the oil soaking into the rice, the rice should be kept in the fridg overnight. FRY the rice in the oil, then add ingredents.

K-Dub's Sausage and Egg Casserole

I also cut it it half and added Mushrooms, red Peppers and a small onion that I first cooked in butter. I also doubled the cheese and used Sausage links.Thanks! Yummy!

Shrimp Lemon Pepper Linguini

You may also add some Lemon Balm, a spice that adds some depth to the lemon flavor without overpowering the flavors. Scampi is a house (and my wife's favorite) around here. Enjoy!

This recipe is based on a basic Asian marinade, however, it would be better served if you add 1/2 cup of sweet rice wine. I often use this marinade for London Broil.

Fish in Foil

I often make this, however, I use fresh garlic and those "smokin' bags" to give this dish a special smoked flavor. You can put your veggies in the bag with the fish as well.

Primavera Fish Fillets

I don't cook with processed soups, however I did use fresh mushrooms, 1/2 & 1/2 and some thickening agent to get the flavor, but not the salt. I liked the celery and carrots, as they added a nice texture to the dish. Thanks!

Enchilada Sauce

Nice job! I would add that to skin peppers, after you remove them from oven, place them in a tightly covered plastic container with some water in the bottom. Put directly in fridge. After they cool, the skins will almost fall off of the peppers.

Potato Ham Bake

Used Half & Half, canned mushrooms and Smoked Gouda cheese instead of the American cheese and the salty soup. I also sprinkled some grated parmesan on the top, with a bit of paprika. Good use of leftover ham!

Slow Cooker Scalloped Potatoes with Ham

If I may tweak the recipe a tad, I used smoked Gouda cheese with a 1/4 cup of Parmesan cheese to add some more flavors. You can't go wrong with this dish!

Shrimp Scampi V

I made a few changes, as this is a standard version of a classic dish. Partially cook the shrimp in a mixture of EVOO and butter over high heat. Remove from pan. Lower the heat, add the garlic, (I also add shallots,) cook till fragrant, add wine, juice of one lemon, return the shrimp, adjust the S&P, add parsley and serve over rice.
