Delicious Ham and Potato Soup

Wonderful! A bit of granulated garlic, a bit of fresh ground nutmeg, a couple drops of hot sauce, more onion, celery & ham. No salt needed. Bit of black pepper. Chicken stock instead of water. No boullion. FF 1/2 & 1/2. Not major changes but sure made for a great soup. I can see this as a base for many cream of anything soups. Asparagus? Yum! Endless possibilities.

Cheesy Polenta Casserole

This is a recipe to be tweeked. Made it as written & all agreed it was gooid. I upped it by adding Italian pork sausage, red pepper flakes, & anything else Italian food consists of. Also used a can of Italian stewed tomato pured. Such a friendly recipe!

Caprese Salad

Lovely! I made these into little kabobs. Placed on a plate, drizzled a bit of olive oil & balsamic vinegar & then sprinkled the basil on top. Everyone loved them.

Sunshine Chicken

Changed syrup for honey. Added toasted sesame oil--don't think I could pick it out. It is better a finishing oil. Next time I will add it just before serving. Added a few pepper flakes. Next time more. Also--line the pan with foil for easy clean up.

I love toasted sesame oil, but this seemed like way too much. So I added a bit at a time until it was just the way I like it. I added an extra squirt of lime juice cause it was just a little too sweet for me.

Sesame Pasta Chicken Salad

Used peanut oil, forgot the seeds, cut waaay back on the sesame oil (and I love the stuff!) brown sugar instead of white. It seemed a little to sweet for my taste, so squirted in some lime juice. even better the next day. Oh! I 1/2 the pasta but kept the sauce ingredients the same. Can add any raw vegies you like. No chicken, but I did have shrimp.

Outrageous Warm Chicken Nacho Dip

Sooooooooo good! Was short on Velveta & filled in with montery jack. Great hot, warm, or room temp. Recipe as written was perfect for us. Taste--need more heat? Add whatever to heat it up to your taste buds. Major winner--and very addictive.

Juicy Roasted Chicken

Hubby & I got tired of the store cooked chickens. We could both detect a chemical--or something. This is just like my grandma used to make--with real butter. Thanks for the great reminder! Simply put--simple is the best!

Nowhere did I read 2# of bacon for a 22# turkey. If you choose not to have 1# of bacon on an 18# turkey--either use less or another recipe. If you have not tried the original recipe--mouth shut! Only want your info if you have tried THIS RECIPE. Thank you

Creamy Dill Cucumber Toasties

Heavy--fattening? Some people have no imagination or creativity. Made this with fat free cream cheese, light mayo.--so where is it "heavy-fattening"? Love it with a slice tomato as suggested! Any less calories & it would be cardboard--of which I am not a fan!

Spanish Rice II

This is how my Mom made it--only without the chili seasoning. Actually, Spanish rice is quite bland. Back 50 years, spicy foods were not "in". So season to taste.

Skin-on Savory Mashed Potatoes

I was never able to make "lump free" mashed potatoes. Decided to stop trying & named my potatoes "country mashed potatoes." This is pretty much it. Everyone loves them--and I don't have to apologize for lumps! ;-0! And that's a GOOD THING!
