Basil Tomato Soup

Delicious! It's tangy, rich and creamy. This is one of my husband's favorite soups from La Madeleine's. Now that I know how easy it is to prepare, I make it quite often. The only thing I do differently is to add a couple tablespoons of cooking sherry towards the end, and I add some sea salt to taste. Then I use my immersion blender, right in the pot, to bring it all together for a smoother soup. Serve it with your favorite grilled cheese sandwich. Yummy!

Best Carrot Cake Ever

The name says it all with this cake. I made these into cupcakes along with my own cream cheese frosting and decorated them with marzipan carrots. I halved the recipe, because I only had enough carrots for 3 cups. It made 18 regular sized cupcakes. My husband took them to his office and said they were gone before the morning meeting. It received nothing but rave reviews. It is a very dense, moist, flavorful cake, which I love! Other than halving it, the only thing I did different was to add a couple more spices to it, like nutmeg and allspice. Follow the mixing instructions, and you won't be disappointed.

Macomb's Irish Soda Bread

I have never had this bread before. I am so glad allrecipes featured it, or I would never have known about it. It was delicious! I made it for St. Patrick's Day along with corned beef and some slaw. Oh my, was it good! The flavor and texture were terrific. My whole family loved it. The bread turned out beautifully. I should have taken a picture and posted it, because it looked like something you would buy from a bakery. It was also very easy to make, so it definitely deserves 5 stars!

Buttermilk Chocolate Cake with Fudge Icing

I bake A LOT and I followed this recipe exactly, but I will not make this cake again. I'm unsure why it has gotten such good reviews. Perhaps people have never had a really good piece of chocolate cake before. I'll give it 2 stars because it didn't taste "bad", but I think there are things wrong with the recipes for both the cake and the frosting. The cake definitely needed more cocoa powder. Also, the texture was strange when it had finished baking. Part of the problem may lie with the method in which it is mixed and it that it is a fairly runny batter. By itself, I didn't care for the cake at all. The fudge topping has a good flavor, but unless you like to crunch on granules of sugar, it should be cooked differently. The sugar needs a chance to dissolve. Fudge should be smooth, not crystallized. I think the problem may be that it needs more liquid, perhaps some corn syrup. I am going to look for another chocolate cake recipe. In all seriousness, the ones out of the box are better. Sorry, but this one is definitely not worth the time.

Russian Tea Cakes I

I wouldn't change this recipe at all. These are absolutely delicious! I made them last year for Christmas, and everyone gobbled them up. I am getting ready to make them again. Can't wait to eat them!

Cappuccino in a Jar

I thought this was delicious and I am not a big coffee fan. I am going to give it as gifts. Yes, I know it's not really a cappuccino, it's just a name for it. If you want it frothy, try putting it in the blender for a bit. It's a good instant drink mix, similar to the General Foods Coffees, except, homemade! I had fun making it and enjoyed drinking it.
