Baked Ham and Cheese Party Sandwiches

Easy to make, and went over really well. Like others, I reduced the butter to a half cup, and used onion powder instead of minced. Initially, I softened the butter, and mixed with the other ingredients to form a spread. (I also added a bit of brown sugar to balance out the Dijon.) I spread a light coating inside the top half of the rolls, then melted the remaining spread and poured over the rolls. I made them mid morning, and kept them in the fridge till people arrived for happy hour. Baked 10 minutes with foil, and 10 minutes without. I'll definitely make these again!

Spicy Slow Cooker Black Bean Soup

Really tasty, good basic recipe that can be adjusted any number of ways. I added a half pound of chopped smoked ham, a heaping tablespoon of minced onion, and a can of Rotel tomatoes with green chilies. I also used two whole jalapenos chopped finely rather than 2 teaspoons. If you don't blend or mash the beans, you can remove them with a slotted spoon, and serve them as, well...beans. (The blended, thickened version is good too.) As I'm typing this review, I'm making this recipe for the third time--this has become a regular meal at our house.

Creamy Au Gratin Potatoes

This came out really well, nice creamy texture. At the suggestion of a few of the folks here, I microwaved the potatoes a bit before I sliced them (about 8 min for 4 whole russets), and I used 2 cups of sharp, white chedder. It can come across as a bit bland, but we served this dish with smoked brisket, so it complimented those flavors well.

Angel Chicken Pasta

Like many others here, I doubled the amount of sauce, but I kept the same amount of chicken and pasta. I added 8 oz of sliced mushrooms, and a diced red bell pepper. I also cooked mine in a saucepan on the stove. I keep a carton of milk nearby, because as the sauce simmers, it gets really thick, so I add a splash of milk every few minutes to keep it thinned down. (1/2-1 cup total maybe.) That really helps with the saltiness.
