King Beef Oven Brisket
Just finished devouring this one! Made for an awesome Father's Day meal for my beef loving husband. It was a little spicier than we're used to, though a few of us loved that, but even the ones who prefer mild enjoyed it. Next time I'll sub a tablespoon paprika for some of the chili powder & should take care of it. The only changes I made were adding a tablespoon liquid smoke and white wine vinegar to the pan with the stock. I also put sliced onions in the pan, cause I have some onion lovers too. Over all, best brisket ever! (Wish I'd thought to take a photo. Not enough left to take one now!)

Swiss Chard with Garbanzo Beans and Fresh Tomatoes
Just had this for lunch! It was the first time I've had Swiss Chard and it was quite yummy. I lowered the olive oil to two teaspoons along with a Tbs of veggie broth. I had to use grape tomatoes halved since I've run out of whole ones. Finally I used Mrs. Dash instead of salt; cutting back on that. I ate a little more than half the batch myself since it was my main dish with a little ground flax seed sprinkled on top. Very nice and filling. It's going in my make again notebook!

Oven Brown Rice
Absolutely delicious! I do add real garlic and onions because I prefer them. It's a simple side or a great base for a main dish. I've done it as is (with a little less broth), other times I've added grated zuchinni, carrot, and sqaush to it with seasonings of my choice, and I've used the technique with a brown/wild rice blend instead. I've also cooked it up with chicken breasts on top to make a complete one dish meal. Great versatility and great flavor! Thanks!
