The Best Bean and Ham Soup

My husband loved this.. was very hearty. I had some 12 bean dried soup beans and a poor quality ham that I had won.. hah.. so put the ham on the smoker then diced it up. I pressure cooked the beans and then added can of tomato basil soup (instead of the tomatoes) and 1 can white shoepeg corn and no chicken stock just water. I think I would use less mustard and worcheshire sauce. The pressure cooker helped to speed up the process and make the stock thicker. Also added a few brussel sprouts and leftover lima beans.. I think you could put just abt anything in there!! I think this would be good the second day and would freeze good as well. would prob make again.

Jo-Ann's Power Bars

I must've done something wrong. My recipe was not good as other cooks rated theirs...It had a strange texture, I tried crumbling it to go over yogurt and such but was still not good. So out to the birdies it went.

Southern Dirty Rice

This was really good and reminded me of my granmothers dirty rice which she would cook around the holidays. I was almost traumatized by the sight of blended livers but moved on and was able to eat it!! this has flavors you dont eat very often..:)

Dijon Grilled Pork Chops

I used equal amts of Dijon mustard and Honey Mustard (French's has their own brand now) Also added some salt and pepper, juice of small can of mandarin oranges. Also had some apple cider from when I had been sick and added a Tablespoon on this on top of each pork chop as they were marinating. I omitted the Worchestershire sauce and brown sugar as hubby is diabetic and felt this wouldnt affect flavor if left out..Used pork loin steaks, tenderized them then marinated for abt 20 minutes. Served mandarin oranges alongside.. These were some of the best chops i've ever grilled..

Cream of Spinach Soup

Good recipe. To make more lowfat I used skim milk and less butter and1/8 cup flour. Also used a handful of brussel sprouts. Put the spinach and sprouts in the blender when they were tender and kinda pureed them.Good to see that it didnt have heavy creams in this recipe. My sweet diabetic hubby loved this recipe.

No-Noodle Zucchini Lasagna

I used seasoned turkey meat instead of the beef. Also used a yellow squash along with the zucchini. The ricotta cheese really makes it. I'm not a big noodle lover and cook for a diabetic husband so loved the noodleless recipe. Some had advised that the casserole was too watery so I cooked my sliced zucchini and squash in the microwave in water for abt 5 minutes.

Broccoli Cheese Soup

To make this recipe more low fat, i omitted the butter and boiled the onion and celery with chicken bouillon/broth. I blended half of the broccoli mixture before adding the milk. Also used 2 T cornstarch to thicken and added butter buds along with the garlic salt. Had some roasted chicken leftover from the wkend so diced a few Tblsp of that. Good basic recipe to make your own.
