Love love these!! So much better than the traditional ones. I can have more of these because they don't give you that acidy feeling after two! You can also add a bit of cranberry juice the pomegranate...yummy!

Pineapple Enchiladas

AWESOME!!! I love pineapples and this was to die for! I did add green chilis, black olives, onions and some jalapenos to give it some kick. All those flavors with the sweet pineapples mixed so well. Added more cheese and more sour cream than it called for. It just wasn't enough sour cream for my taste. And I let the pineapple mixture marinate over night...might be the best thing I have ever had! Love this recipe! Thanks for sharing!!

'Dressed' Cucumber

Of course I added two small limes instead of juice from one. It just didn't seem like enough from one. I also put in more Hot Sauce (Louisiana Hot Sauce) and put in some pepper and a pinch of salt. Didn't have a red bell pepper, so I added a couple slices of tomato to add to the mix. Added a purple onion...and a LOT at that! It was good but I for sure want to try and mix it up a bit for the next times. A great afternoon snack for work and very easy to make!

Chicken Scampi II

Great recipe! Little too much butter for us but will be cut down next time. I added some veggies with the chicken (onions, mushrooms, red & yellow bell peppers)! Added pepper and a bit more lemon juice and less salt. Thank you sooooo much!!!! LOVE IT!!!

Favorite Corn Bread

GREAT!!!! It was gone half way thru the first quarter of the Texas vs Bama game! The only thing is that I used buttermilk instead of regular milk like someone else suggested. Used butter instead of shortening and added honey to it. Sooo soo good!!!

Peppered Corn Bread

Everyone loved it! I didn't use canned corn though I used fresh and no green onions I used a small white onion...about a 1/2 cup or so but I love onions! Oh and I added a little bit of honey to sweeten it up. Will totally make this again!

Mint Chocolate Chip Cookies

Loved these cookies! I thought I had some food coloring at home but was out so I left that out. I also used Nestle Tollhouse mint and dark cholocate chips. Everyone loved them! When they were cooking my house smelled like Christmas when I was a young girl! Made me a homesick! Will make them again and try different chocolates and such!

Libby's® Famous Pumpkin Pie

Great pumpkin pie! I made this for my guys at work and it went so fast! I am not even a pumpkin pie fan and I thought it was great! I did use less milk than it called for but not that much less. I am glad I did because when I poured the mixture into the pie crust it completely over flowed! And I did add a little more cinnamon than it called for...thanks for the recipe.

Sausage Gravy III

Very good! My boyfriend talked about it all day long! The only thing was that with 4 cups of milk it was a little bit too runny for us, so I had to add more flour. Plus added some seasoning to the sausage while it was cooking. Other than that it was great!
