Banana Bread

Very good, very dense and not very sweet. I would like it to be a little more moist, will try again with more banana or some applesauce or yogurt or something. And walnuts, of course!

Morning Glory Muffins

Fabulous! I always use at least part whole grain flour, I made them with 1 c AP, 1 c whole wheat, and 1/2 c oat flour (just put rolled oats in your food processor). They were a hit for snacks and breakfast and they freeze well!!

Lima Beans and Ham

Good as is, but better with more seasonings. I added 1/2 t each dry marjoram and tarragon and 1 t minced garlic at the end and they perked up the flavor. I might add more of all three next time or add a couple teaspoons of dry dill instead. Frozen limas worked well; I eliminated the initial 15 minutes of simmering of the limas by themselves.

Really good! I thought it was too thick, but that is easily remedied. I also think it would have been better if it simmered longer. My husband wanted to dislike it but didn't =)

one of the few quinoa recipes that my whole family likes. The kind of broth you use makes a difference in the taste of the dish, so make sure you use one with good flavor!

Lentil Soup with Lemon

Delicious! I didn't have cilantro, but otherwise follwed the recipe. Ground chipotle pepper was perfect in it. Now I can stop looking for a better lentil soup recipe!

Cocktail Meatballs

Fabulous! Flavorful but very kid friendly. Some reviews complained that the meatballs were bland, but you WANT that with a zippy sauce! I don't want heavy seasonings competing with the sauce! Just as good with lean ground turkey. Bake ahead and freeze, stir the sauce together and refridgerate overnight with the meatballs thawing, then put into the crockpot to warm it all up the next day. Makes cooking for a party easier.

Fry Bread Tacos II

I'm reviewing the fry bread only. Great! Easy! Except for cleaning up the oil afterwards. =) I made the dough in 6 pieces, that was a good size for my taco. I used my Kitchenaid with the dough hook, let it go for 5 minutes, turned it off and let it sit 5 minutes, then dropped it on a floured board to cut into 6 chunks.

Boston Baked Beans

I had almost given up on making baked beans from scratch; I'm glad I looked one more time and found this one! Very good! I needed them vegetarian, so I left out the bacon and added some liquid smoke at the end. I also made them in the crock pot so I don't add salt until the end either, as it can keep the beans from softening up.

Lemon Lover's Pound Cake

Delicious! And even better on day 2 & 3! Everyone enjoyed it. I was low on sugar, but 2 1/2 cups made the cake perfectly sweet for me. Be aware of how much your bundt pan can hold!! I stopped filling mine at 2/3 full and had enough to bake a medium loaf cake. I didn't think it needed the icing... I dusted the greased pan with granulated sugar, to avoid that ugly flour residue, and it made a lovely crust. It softened the next day, but the cake tasted better, so it's all good.

Mardi Gras King Cake

Really yummy! Not too sweet. I used a whole almond for the "baby." I will make this as a coffee cake through the year. I cut the recipe in half, as there are only 3 of us, and it's keeping nicely in my covered cake dish.

Tuna Noodle Casserole from Scratch

Brought back childhood memories. Better 2nd time with 1 t each dry mustard & dill. I used fried onions as I didn't have dry crumbs on hand. I cut fat with a butter wrapper to grease the pan and 4-5 T total of olive oil & butter to saute vegs, 1T parmesan on top instead of shredded cheese. Saved cleaning another pan by adding flour right to the vegs, then slowly added warm milk. Bow ties worked fine in 2nd batch.

Golden Yam Brownies

I love these but thought they were too sweet, so I didn't make the glaze. Next time I made them I cut the white sugar to 3/4 c and swapped half the butter for applesauce. Yum!! So moist!! I might experiment with one less egg to see if they will hold up better on a cookie tray.

Wisconsin Native's Beer Cheese Soup

Very good! Thinner than I thought it would be or I would have given it a 5. I used the ingredients as written, but made in one pot: sweated the veggies in the butter until tender, added broth until hot, then milk till hot, then the flour tossed with cheese so I wouldn't get lumps in the soup. Beer and last seasonings at the end. Next time I will add less broth or some instant mashed potatoes to thicken it.

Salmon Cakes II

Good but not great. I didn't see anyone else complain, but mine didn't stay together well and I had to fuss with them when I flipped them. The cheese didn't add anything for me. I made a sauce with yogurt, lemon, dill, and salt that added a lot to them, though! Good start for me, though, and I will try Old Bay instead of worcestershire next time.
