Spicy Bok Choy in Garlic Sauce

YUM! I have to admit that I was out of sesame oil and used tahini instead, just added it with the sauce at the end. I also used less water so I didn't have to simmer the sauce for the three minutes so the veggies stay crisp!

Black Magic Cake

FABULOUS cake, fairly dense, not too sweet, and nicely moist. Good flavor, but I might add a little more cocoa next time. Easy to make, too! I'll be making this one a lot in the future, especially if it keeps nicely. I saw that some reviews mentioned that it doesn't dome up... will be nice for rounds that I'm going to stack, but my 9x13 cake was flat out of the oven and sunk a bit in the center as it cooled. I just put less frosting around the edges to make it look flat and noone could tell, but don't make a 9x13 if that is a concern to you. Might be an issue if you're using just powdered sugar or a glaze.

Seven Minute Frosting I

If yours is runny, your cream of tartar might be old! This recipe is SUPER and EASY! I know this frosting doesn't keep at room temperature and my fridge was full. Before bed I set up the whites and water in the fridge and all the dry stuff in a stainless bowl over a pot of water with the vanilla bottle and beaters out, just heated and beat it and spread it on my cake. 10 minutes after I turned on the heat, my cake was frosted. Everyone loved it. Perfect on the Black Magic cake! I was nervous because I've never seen a 7 minute recipe with water, but it was great!

Hot Tamale Pie

I've made this several times now and LOVE it, as do my husband and daughter. Great as is or change it up. Cut in half fits well in a 9" pie pan for 4-5 servings. I usually leave out the corn and add 1 1/2 cups or 1 can of drained kidney or black beans. Less cheese works fine, too. Tonight I'm trying it all vegetarian with lentils instead of the meat. Google recipes for make your own Jiffy corn bread so you don't have the processed corn. Can make extra filling and freeze it, set up your homemade corn bread mix, come home and throw it together and into the oven!

Chicken Scallopini

Fantastic and so much easier than I thought it would be! I didn't have time to reduce broth for demi glace, so I used veggie Better Than Bouillion, a round teaspoon worked well. I sliced the breasts into bite sized pieces, the way they serve it at Macaroni Grill, so that I didn't have to pound it. Next time I will add artichoke hearts and use less flour, as I threw out half of it.

Sweet and Savory Kale

Delicious! My only problems were that it was too sweet and too soupy. Made it again with just the sugar on the cranberries and 1 t added sugar and about 1/3 cup broth and simmered it covered and I liked it much better. Keeper!

Cool Cucumber and Avocado Salad

We all liked this a lot! Used 3 T lime juice, so maybe 1.5 limes worth? didn't want it so tart. Rogan josh curry powder was awesome. I only had one avocado and think it was delicious!

Banana Cake VI

This is a fabulous cake! I ignored the baking directions, baked at 350 and it was wonderful. Made again and replaced half the butter with applesauce (put in with the banana) and it was just as good. Makes 24 cupcakes and a 9x9 pan. I changed the servings to 12 and got 12 cupcakes and a 9x9 pan.

Morning Glory Muffins

Fabulous! I always use at least part whole grain flour, I made them with 1 c AP, 1 c whole wheat, and 1/2 c oat flour (just put rolled oats in your food processor). They were a hit for snacks and breakfast and they freeze well!!

Lima Beans and Ham

Good as is, but better with more seasonings. I added 1/2 t each dry marjoram and tarragon and 1 t minced garlic at the end and they perked up the flavor. I might add more of all three next time or add a couple teaspoons of dry dill instead. Frozen limas worked well; I eliminated the initial 15 minutes of simmering of the limas by themselves.

one of the few quinoa recipes that my whole family likes. The kind of broth you use makes a difference in the taste of the dish, so make sure you use one with good flavor!

Cocktail Meatballs

Fabulous! Flavorful but very kid friendly. Some reviews complained that the meatballs were bland, but you WANT that with a zippy sauce! I don't want heavy seasonings competing with the sauce! Just as good with lean ground turkey. Bake ahead and freeze, stir the sauce together and refridgerate overnight with the meatballs thawing, then put into the crockpot to warm it all up the next day. Makes cooking for a party easier.

Fry Bread Tacos II

I'm reviewing the fry bread only. Great! Easy! Except for cleaning up the oil afterwards. =) I made the dough in 6 pieces, that was a good size for my taco. I used my Kitchenaid with the dough hook, let it go for 5 minutes, turned it off and let it sit 5 minutes, then dropped it on a floured board to cut into 6 chunks.

Boston Baked Beans

I had almost given up on making baked beans from scratch; I'm glad I looked one more time and found this one! Very good! I needed them vegetarian, so I left out the bacon and added some liquid smoke at the end. I also made them in the crock pot so I don't add salt until the end either, as it can keep the beans from softening up.

Easy, yes! Tasted good but I thought it was too sweet. I will try again without the sugar or with darker chocolate, maybe I will just scoop it into dishes.
