Bacon, Egg, and Cheese Strata

I added not only mushrooms, but diced white onion, jalapenos, and white potatoes (highly recommended)...and it was very filling! The potatoes really helped add more substance to such a fluffy dish.

Bacon Wrapped Dates Stuffed with Blue Cheese

My husband and I couldn't get enough of these on our Honeymoon in Spain...but they just did the simpler versions with just dates and bacon (they sometimes put a whole almond inside for crunch). I was so excited to try these! We did 4 kinds to see which we would like best: With Blue Cheese, With Goat Cheese, With Blue Cheese and Almond, and With Goat Cheese and Almond. The results were: Just Goat Cheese! We couldn't taste the almond, nor did it give us the "crunch" we were looking for. The Goat cheese stands out more than the blue cheese, which tends to blend in to the sweetness of the date. Can't wait to make these again---but next time I'll be keeping a closer eye on my oven, because the cooking time was a little off!

Tuscan Soup

This was amazing! Some changes: In a large stock pot, I sauteed the diced white onion in a little EVOO, then added the spicy turkey sausage (all 5-minus the casing). Browned those, did not drain fat, and added the sliced potatoes (you get a lot from 6-7 medium whole potatoes), added about 8 cups of low fat chicken stock, and brought to a boil. Salt and pepper were OK, but I have something called Italian Seasoning Mix, so I added that, with some garlic powder...and wow! Finally, I used frozen chopped collard greens (about 2 cups), and threw that in after the potatoes were already soft---cooking them for an additional 5-10 minutes to heat up a bit. This is good without the milk (which we had half and half---works well), but it's each person's taste. A little parmesan cheese on top and it was delicious! Not too bad for you either!!! Thanks!

Catfish Cakes

I don't know what I did, but my were too loose, and crumbled a little while I was cooking them. I decided to add a little beer and flour into the mix, in hopes it would get it a little wetter, and bind better...seemed to work. The beer added this amazing flavor to the cakes. Highly recommend it adding a wheat beer if possible.

Andrea's Pasta Fagioli

Great! Definitely add cannelini beans, and I also added green and yellow long neck squash. The pasta should be added to each individual serving...it soaks up all the broth when it sits in it for a while (especially when storing overnight or freezing---store noodles and soup separately!)

Boilermaker Tailgate Chili

Holy cow...totally went into this reciped as a skeptic...but very delicious. I actually tried the chili every 30 minutes as it was cooking...and I thought it had more kick within the first 30 minutes than it did at the end. Next time, I'll be adding more cayenne and jalepenos to give it a little more kick.

Slow Cooker Chicken Taco Soup

Loved this recipe! Super simple...and I highly recommend adding the beer! If you're someone who enjoys beer for the flavor, it definitely adds something to this recipe. But I also put a little chicken broth in to thin it out as it cooked...so both were good together. I also used the taco seasoning recipe, instead of the packaged stuff...it had a kick to it, and wasn't too spicy. My husband couldn't get enough of this, and he's hard to please. I think next time I'll make some rice and try adding it in as it's served. Thanks for this keeper!!!

Slow Cooker Carnitas

Absolutely delicios! After reading some of the reviews, I decided to double the spices--definitely suggest that! Also, throwing the shredded pork into the oven at 400 F for 8 minutes or so was a great idea to crisp up the edges a little. We will definitely be doing this one again...but with friends, so they can see my mad cooking skills! Thanks!!!
