Sweet Bacon Wrapped Pork Loin

Holy cow!! This is the best pork loin recipe that I have ever tried. I used a smaller pork tenderloin as I am not a fan of the jumbo pork loins you see at the store. These usually come two tenderloins in one pack so I wrapped these together with the bacon. Browned it in my dutch oven then topped with wonderful tasting sauce and finished it in the oven. I would recommend foil or lid for the first 25 min of baking to help keep the sauce from browning and drying out. I always cook meat using a meat thermometer to insure proper cooking of meat and It did take longer than 30 min but well worth the wait. Remember, overcooked pork is always dry. A properly prepared pork tenderloin will be a bit pink but very juicy and tender!

Cheesy Sausage Zucchini Casserole

I made this on the stove top hamburger helper sytle, skipped baking in the oven to make it a faster dish to prepare. Just cooked long enough for the zucchini to soften a bit then added the rice and cheese. Also added diced bell pepper and sliced fresh mushrooms instead of canned. This is a great recipe to use all of those zucchinis, peppers, onions and tomatoes from your summer garden! Kid tested and approved even with all the veggies!

Whole Wheat Pumpkin-Applesauce Muffins

Super yummy!! Made these for my boys as a healthy breakfast alternative. Eliminated the oil and subbed with a little more applesauce and a little more pumpkin.

Baked Paprika-Parmesan Chicken

Used 1tsp regular paprika and 1 tsp smoked paprika. We are forever using this recipe as a good substitution for fried chicken! The whole family loved it. Even used gluten free flour to make it compliant with our GF diet! Yummy!

Pumpkin Turkey Chili

All in all this was a very good chili. I took into consideration all of the prior reviews and added 1 can of chili seasoned tomatoes, one can of chili seasoned beans, one can red kidney beans, 1 c. tomato juice, 1.5 cups of water, 1 tsp. cumin, and 1/4t.cayanne pepper

TRIPLE CHOCOLATE MESS

I submitted this recipe a little while back. Please note...I have recently purchased a new oval crockpot and tried this recipe in it instead of my taller round pot. I would recommend reducing cooking time to 4-5hrs. on low for larger oval crockpots so that the dessert does not harden and stick to the bottom and sides.

I make this for company all the time. It gets rave reviews and it is so easy. I generally cut the sugar as it seems too sweet if prepared according to the recipe.

Buttermilk Chocolate Chip Cookies

Oh my! These are the among the best chocolate chip cookies I have ever tasted. Certainly the easiest to prepare. Possibly a bit of a strange aftertaste but likely due to the buttermilk mix...but nothing that a glass of milk can't fix! Overall, I say these are very good cookies.
