Fajita Seasoning

Hands down best fajita seasoning ever! Made it 3-4times now and we just love the taste much better than store packages. Haven't added the cornstarch and don't miss it. I make a couple of double batches, mix it well and store it. Just add 3tbs , one red pepper, one onion,chicken breast or steak. We even add shrimp to the chicken or steak. It's really better than even restaurant fajitas.

Easy Tiramisu

This was amazing. I bought the soft ladyfingers by mistake so I gave just the tops a quick dip in the coffee. As other cooks suggested I also whipped a pint of heavy whipping cream and added a couple shots of Bailey's to it--that was the secret ingredient. We combined the egg yolk sugar vanilla mix to the whipped cream and layered the fingers and cream until we ran out. I used an 8x8 pan and got 3 layers. Topped it off by shaving a dark chocolate bar on top with a sprinkling of Trader Joes hot cocoa mix. Chilled it overnight and had it for dessert after dinner. Best part was the amazing taste and it was not soggy at all. Perfect texture and taste. And way easy!

Fruit 'n' Honey Granola

I make this granola every 2 weeks and eat it almost every day with greek yogurt and berries. Even my picky husband loves it. Definitely heat the oil and honey for a few minutes to loosen it up, you don't need to boil it, just warm it so mixes better. Change up your nuts or fruits to get more variety. This one is a keeper.

Stuffed Jalapeno Firecrackers

delicious! I halved the jalapeños, spread some cream cheese on them, then sprinkled seasoning, wrapped with bacon and baked at 400 degrees for 20-25 minutes.

Amazing Mexican Quinoa Salad

just made this today because I saw I had all the ingredients except the red wine vinegar. Took a little taste of it and it is awesome! Even scooped some onto tortilla chips like a salsa! since I did not have red wine vinegar, I used a quarter cup fresh lime juice and a splash of apple cider vinegar. also subbed the red pepper for a large jalapeño.

Fish Tacos with Honey-Cumin Cilantro Slaw and Chipotle Mayo

OMG! the best fish taco ever! Don't miss the chipotle mayo, it rocks! Hubby doesn't like cabbage so we used iceburg lettuce and it was still the best! The flavors blend so well, so fresh, will definitely make again---weekly!
