Light and Fluffy Spinach Quiche
As named, this quiche is light, fluffy and delicious! For such a nice taste, this was incredibly easy to make. I, too, used a deep dish pie crust, sauteed the onions first, and added a touch of pepper, parmesan cheese (2 tsp), and garlic. One previous reviewer questioned why all the ingredients couldn't be mixed together. I mixed the onions in with the spinach-egg mixture, and layered the heavy ingredients on the bottom (cheese, m'shrooms, meat, etc.), so they wouldn't weigh down the quiche mixture; keeping it light and fluffly. A+++ Kristin!

Jambalaya Salad
I made this for a workplace potluck and two people requested the recipe. Good dish, however, after chopping up everything it was not quick. Suggest robust italian dressing. Will probably make again.

Spinach Quiche
What a great recipe!!! I decided to use 2 tablespoons of butter due to the comments made by previous reviewers, as well as omitting the shredded cheddar on top of the quiche, and it came out perfectly. The cheddar inside the quiche was enough for my family. Also for those of you, like myself, who refuse to season to taste with raw egg products...I used 1/2 tsp salt & 1/8 tsp pepper. Fits comfortably in a 9-inch DEEP DISH pie shell. All-in-all, a wonderful meal-time treat!
