Baked Pancake with Peaches

We made this for breakfast because we had a big bag of fresh Georgia peaches that we picked up on our way through Georgia this past week. The recipe was very easy to put together and baked beautifully. The pancake itself would have benefited from a little more vanilla, nothing that a little pancake syrup did not fix.

Bacon Crackers

This sounded amazing and it did not disappoint. I found that if you planned a little extra time to leave them in the oven until your bacon is just the correct crispiness for you liking that you end up with a perfectly candied piece of bacon. I would also cut the bacon to the size of the cracker you are using and not necessarily in thirds, I was able to cut my bacon strips into 5 pieces and it worked great. I made a lot of these for a party and there were not many left by the end of the night.

Dee's Roast Pork for Tacos

This is absolutely the best pork shoulder recipe that I have ever tried. I took my 5 pound pork shoulder, followed the directions for the dry rub, and then placed it in my slowcooker for for about 5 1/2 hours on high. I checked my temp and then let it rest on the keep warm setting and it was the most tender, well seasoned pulled pork that i have made. I did not use any braising liquid or anything, just let the heat and the park do its magic. We used our pork of tacos for five hungry people, have had left over the next night for two and we still have a lot of meat left. I highly recommend trying this recipe.

White Bean Tabbouleh

This Tabbouleh recipe is simply amazing. The flavors are all there and it is extremely satisfying. We made a mean out of it with a little flat bread toasted and served with olive oil. The vegetables are raw and crisp, the olive oil and lemon juice give you that perfect Mediterranean zing of flavor and yet it is so simple and healthy. My wife is asking me to make this once a week, who would have thought that she would be begging for more bulgur and vegetables. This is going to be on our frequently made recipe list I am sure. Thanks for sharing.

Mayan Couscous

Made a couple of variations that resulted ina dish that my whole family enjoyed. I started by not adding the salt and cumin to my cooking water. I cooked the couscous in water and added 1/2 teaspoon of salt and 1/2 teaspoon of cumin in with the lime juice and olive oil. This was plenty of salt and the dressing covered everything nicely. Out of necessity I substituted black eyed instead of black beans and it was really a great combination. I think I would stick with the black eyed peas in the future. We will definately be making this dish again, it would we a great dish to take to work for lunch.

Robin's Best Ever Hummus

This is our favorite traditional hummus recipe so far. We are making it over and over again to have as a snack at work or at home. If you are skipping the Tahini paste you really need to take some time to go and find it. I get mine at Cost Plus World Market. Buy and extra jar while you are there so you have a spare in the pantry.

Spicy Mango Salad

Cape Cod Apple Cranberry Pie

I made this recipe for Christmas day and thought that they pie was delicious. The combination of the cranberries and the apples were delicious, and the maple syrup and sugar worked great with each other as a sweetener. This was a great recipe.

Pork Marsala

I have come to really like Marsala at the local Italian restaurant so when I saw this recipe, I was very excited. My only variation from the recipe is that I used pork tenderloin tips instead of using pork chops. The recipe was very easy to prepare and the flavors were delicious. We are defiantly keeping this recipe handy for the future, even though we do not make many recipes more than once.

Homemade Salted Caramel Sauce

Delicious caramel, just add the salt slowly and be sure to stir it well as you add the salt. My salt settled to the bottom and I did not get full benefit of the salt in the flavor profile.

Creamed Pork Chops

This is a delicious way to make this style of pork chops. I had an old traditional recipe for pork chops and stuffing that I have always followed, but this one makes for an even juicer and more tender pork chop. Placing the pork chops under the stuffing really keeps the moisture in the pork chop instead of drying the pork chop out. Mixing the stuffing and soup together was also new for me with this recipe, and I really liked the resulting flavor. I added a little more milk than stated to make sure that it was going to be a nice consistency.

Chili Dog Casserole II

This was a super easy dish to make and it tasted delicious. It only takes a couple of minutes to put it all together and pop it in the oven. Be sure to get a good can of chili that you like, I used Wolf chili without beans.

Cheesy Potatoes

These potatoes are like eating spoonfuls of the most delicious twice baked potato that you have ever had. The cheddar, cream of chicken soup and the scallions really make these potatoes pop. My thirteen year old daughter kept asking for more throughout the dinner. A definite winner.
