Slow Cooker Carnitas

This recipe makes enough meat for a teenage boy and 5 friends. :) Double the amount of all seasoning and rub it all into the roast (don't just sprinkle or coat it). After cooking, break up the meat into large chunks/shreds on a cookie sheet and put it under the broiler for a few minutes. Serve on warm corn tortilla with diced sweet onions, cilantro, jalapeno slices and some salsa.

Slow Cooker Beef Stew I

This is a fine basic recipe that can easily be tailored or improved for your taste and preference. While it is tempting to throw everything in the crock pot before rushing out the door on busy days, the stew will benefit tremendously from browning the meat and deglazing the bits with wine or broth. Two more cloves of garlic wouldn't hurt, either. :)

Potato Leek Soup III

My changes to the recipe: Reduce butter to 1/2 cup (1 stick); reduce heavy cream to 1-1/2 cups of half and half; increase leeks to three; add 1/2 pound of hot Italian sausage (cooked and crumbled). Served with a fresh loaf of french bread. It was a very rich and carb-heavy meal, but good for an early autumn evening.

Sweet Potato Pie I

This is a great basic recipe that is wonderful when made as written, especially for beginners. It's also a very good starting point for more expert or adventurous bakers. I've made it several times, always 2 at a time, because they go quickly. :) Replacing half of the white sugar with brown sugar is nice. I also increase the amount of spices to my liking. The pie turns out fine with milk, and better with evaporated milk or half and half.

Best Big, Fat, Chewy Chocolate Chip Cookie

Mrs. Sigg's Snickerdoodles

I have lost count of how many batches I've made, and every single cookie was happily devoured by friends, family and coworkers. It never disappoints! The dough was a bit harder to handle when a storm rolled through Seattle recently, but the cookies still turned out perfectly.

Japanese Okonomiyaki

This recipe yielded pancakes that were a bit too doughy, not the okonomiyaki I remember. Perhaps less flour or more water would fix that. Also, American cabbage is simply too "leathery" for this dish to turn out right.

Joey's Peanut Butter Cookies

This was my 1st try at peanut butter cookies, and I'm glad I chose this recipe. It's not too heavy, has the perfect level of peanut butter taste, and stays fresh and soft for days. I used JIF extra crunchy peanut butter.
