Baked Kale Chips

This recipe turned my fiancé and I onto kale! Definitely take the time to dry the kale leaves after rinsing to obtain the perfect crisp in the oven. Usually I drizzle oil over the ripped kale chips on the parchment paper, but I think I will try the technique where I toss the olive oil and kale chips in a ziplock bag to get a more even coating. I also dust my fiancé's half of the baking sheet with cayenne pepper, since he likes it spicy. I've made this dish for football parties and it's been a hit every time.

Roasted Brussels Sprouts

So easy! I love ordering roasted brussels sprouts at steakhouses and the deli section of Whole Foods and know I can replicate the flavor at home with little effort. I was a little aggressive with my salt, so I'll definitely take time to measure next time. I also oven roasted the brussels sprouts whole, but next time I want to try cutting the sprouts in half to have more surface area roasted in the oven.

German Potato Pancakes

I whipped up this recipe for my family when the were visiting for the holidays and brought with them a bag of potatoes (don't ask). I followed the recipe and previous comments about soaking the shredded potatoes in ice and cold water and the pancakes had anice yellow golden color. I fried the pancakes in olive oil which required a longer frying time (~8 minutes).

Jalapeno Cranberry Sauce

I have made this dish two years in a row and it's something my boyfriend and I look forward to during the holiday season. The dish is very easy to make and everyone is pleasantly surprised my the sweet tart flavor of the cranberry in the beginning and the smooth jalapeno taste at the end. I recommend using 1/2 cup of sugar to maintain the tartness of the cranberry and cut out some calories, leave the seeds of the jalapenos in if you like it spicy and allow mixture to reduce for 30 -45 minutes to get a jam like consistency that is ideal for turkey sandwiches.

French Apple Tart (Tarte de Pommes a la Normande)

I used frozen pie crust and apple juice instead of apple brandy and I received many compliments about the desert from co-workers and people at Thanksgiving.

Italian Breaded Pork Chops

AMAZING! I followed the recommendations to coat with flour and halve the amount of eggs used to soak the pork chops prior to coating in bread crumbs. Have made the recipe multiple times after my guests loved it at my dinner party.

Easy Vodka Sauce

White Gelatin

A big hit a my dinner party! I spooned individual servings into disposable punch cups and then topped off with a raspberry sauce reduction. Everybody had seconds. I did half cream cheese and half ricotta cheese. I also used two geltain packs.

Chicken Tikka Masala

The sauce was too spicy/salty and it tasted more like really salty chili than tiki masala. I'll have to try the recipe again with 1/2 the amount of spices in the tomato sauce and add the salt afterwords. Also, my local Indian restaurant puts chunks of tomatoes and onions in the sauce as well.
